Couscous with vegetables

It’s not a typical couscous salad, as it has a sweet flavor thanks to raisins and an orange juice. Very refreshing in the morning and takes only 15 minutes to prepare it.

You will need:

  • 200 ml vegetable stock
  • 200 ml orange juice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground coriander
  • 250g couscous
  • 75g raisins
  • 2 ripe tomatoes, chopped
  • 1/4 preserved lemon, chopped (optional)
  • 1/2 bunch of parsley, roughly chopped
  • 1/2 bunch of mint, roughly chopped
  • 1 garlic clove, crushed
  • 4 tbsp olive oil
  • salt and pepper

Combine the stock, orange juice, spices and 1/4 teaspoon salt in a saucepan. Bring it to boil, remove from a heat, add couscous and leave for 10 minutes.

In a bowl mix raisins, tomatoes, lemon, herbs, garlic and oil. Stir in the couscous and season with salt and pepper.

Serve warm or in a room temperature.
