Lemony olive oil banana bread with chocolate

One of my favorite blogs is 101 Cookbooks, recipes are great and pictures so good, that you feel like grabbing something delicious straight from it. I go there from time to time to search for something tasty. Tomasz likes banana bread and asks for it from time to time, so I’ve used a recipe for a lemony olive oil banana bread. It is delicious (but what with chocolate inside isn’t), moist thanks to an olive oil and you can taste a bit of a lemon. All together gives you a perfect morning treat. 

You will need:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 3/4 cup dark brown sugar
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chopped dark chocolate
  • 1/3 cup extra-virgin olive oil
  • 2 large eggs, lightly beaten
  • 3 ripe bananas mashed,
  • 1/4 cup plain yogurt
  • 1 tsp freshly grated lemon zest
  • 1 tsp vanilla extract

Preheat the oven to 175ºC and grease a loaf pan (23 x 13 cm). In a large bowl, whisk together the flours, sugar, baking soda, salt and the chocolate pieces. In a separate bowl combine the olive oil, eggs, mashed banana, yogurt, zest, and vanilla. Connect the mixtures from both bowls. Scrape the batter into the prepared pan and bake for about 50 minutes, until golden brown.
