Zucchini Pancakes

I’m getting very excited, as the next two weeks will be all about weddings (I’ll attend 2!), traveling and hanging out with great people I haven’t seen for a while. I can’t wait! I could surely avoid a “packing part” as I never know what to take and I leave it up to the last moment. I also need two dresses, but this will be a nice shopping obligation ;)
I still have too many things to do and organize before I leave, so I need a good and fast breakfast. Zucchini pancakes are great for this occasion. I’ve found it on Wypieki z pasja blog and I know that it wasn’t the last time I had them. You can eat it on many ways - sweet, with a feta cheese, spicy, or simply just like it is, still hot from the pan. It will take like 10 minutes to make it and it’s definitely worth it :)
You will need:
- one medium zucchini
- 1 large egg
- small red onion, finely chopped
- 3 tbsp parmesan cheese, grated
- 3 tbsp flour
- a few leaves of fresh basil, chopped
- 1 tsp of herbs de Provence
- a few drops of lemon juice
- freshly ground pepper (3-4 pinches)
- salt to taste
Combine all the ingredients in a bowl and then fry on an olive oli, on a medium heat. I mabe each pancake out of one tablespoon of the zucchini mix.
It goes very well with a sweet and spicy sauce.
