Healthy recipes may be easy. Just like this one. I’ve found a chickpea flour a couple of days ago and I was looking for an easy way of testing it. I found in on Gourmet Traveller website.
When you mix flour with water you may think that there’s something wrong, or that you added too much water, but you didn’t. It’s all ok. I think that this crepes go very well with tomato and avocado. You can try a different mix as well, let me know if it worked. You know what’s the best part of this particular recipe? It’s tasty and easy. How cool is that!
You will need:
- 160g chickpea flour
- 1 tbsp olive oil plus more for frying
- 500ml water
- pinch of salt
- 1/3 cup herbs (like rosemary, sage, thyme)
- tomato, avocado, balsamic vinegar for serving
Mix flour with water, salt and 1 tbsp olive oil and refrigerate overnight.
In the morning mix it with a spoon a couple of times. Heat 1/2 tsp olive oil on a frying pan, pour 2 tbsp of a flour mix on it and spread some herbs. Fry on one side until golden brown and delicately move on another side. Repeat with the rest of butter. I served it with cut tomatoes and avocado with a bit of balsamic vinegar.
