BLT is a very simple sandwich but it will rock your day. I used to believe that the best one you can get in San Francisco’s Devil’s Teeth Baking Company. But then I made this one at home out of ingredients I got on one of Barcelona’s farmer market.
You can make it simple, just Bacon-Lettuce-Tomato or you can go a bit further and experiment with additions like avocado or egg. But to know what a real BLT is, you need to go with basics first. One is sure - this flavours go perfect together - salty bacon, sweet firm tomato and crispy lettuce. The most important in this sandwich are ingredients, it will be much better with a high quality ones :) You can try a homemade mayonnaise as well (very easy to make).
You will need (for 1):
- 2 bacon stripes
- 1-2 leaves of Romaine lettuce
- 3-4 slices of tomato
- 2 slices of bread
- a bit of an olive oil
Bake the bacon (I did it in 150*C, 300*F) to make it crispy. When ready, clean extra fat with a paper towel. Brush slices of bread with a bit of an olive oil on each side and fry on a pan until golden. Cut lettuce and tomato. Spread mayo on both toasts and place on one lettuce, tomato and bacon. Sometimes there’s just not enough time in the morning. Sometimes alarm clock forgets to ring, cats are too heavy and they’re sleeping on your quilt so you’re stuck for a while under it and then you have only 15 minutes to take a shower and run to work. Pan con tomate is a spanish breakfast for one of this days. It is almost too easy to mention about, but we have a tendency to keep forgetting about simple things, so this is a small reminder :)
You will need:
- olive oil
- ripe tomato
Cut your baguette in half lengthways and toast it (if it’s a big one just use a piece of it). Pour an olive oil over it (not too little) and cover with a grated tomato (yes grated :). Season with salt for taste.

Love comes with a price, in a situation I will describe literally with price. I adopted a street cat in Barcelona - sweet little Lola. Ryszard (our little treasure) fell in love with her and accepted her straight away, she was the one fizzing around for first few days. After a month we are a happy family of four. But, as a responsible owner I had to check if she’s healthy, give her some medicines, vaccinations and make a passport, as little Lola will be flying to Berlin with us in few months. And O MAMA, it’s so expensive. I feel like adopting a fancy cat, as I spent a small fortune on her. I love her already, Ryszard has companion to his night runs, Mr. T. carries her around and they share secrets. And when we all go to bed and she sleeps next to me, I know it was all worth it. Then Lola and Ryszard wake me ten times during a night and I have doubts. Is it an introduction to motherhood?
PS. She eats like a tiger as well ;)
I found this recipe on Yammie’s Noshery and it looked so good, that I had to make it
You will need for bread rolls with cheese:
- 25g active yeast or 2 tbsp yeast in powder
- 1 cup warm water
- 1/4 cup butter, melted
- 1/4 cup olive oil
- 3 cups flour
- 1 tsp salt
- 1 tbsp sugar
- 2 cloves garlic, squeezed
- 1 tbsp mixed herbs (optional)
- mozzarella cheese
- mix of cheese or cheddar cheese for topping, grated
Mix water with yeast and let it work for few minutes. Meantime melt butter and mix it with oil. Add yeast with water, mix it, then add 1 cup of flour, sugar, salt and and squeeze in garlic. Mix it and then add second cup of flour, mix it, add third cup of flour and knead the dough for 10 minutes. Place it in a bowl brushed with an oil and put in warm place for about an hour (You can warm up an oven to 50*C and place bowl with the dough inside).
Put some oil on your hands and start to grab small pieces of dough, flatten it, place a nice piece of mozzarella inside and cover it by combining edges, so cheese is hidden inside the dough. Do it well, so cheese won’t leak. Place it on a baking tray covered with paper. You should make around 20 of them. Each one sprinkle with pieces of grated cheese.
Bake in 180*C (375*F) for about 15 or 20 minutes (depends on an oven), until nicely brown and cheese on top is baked.
I served mine with a tuna spread. You can use this recipe or try something new:
You will need for tuna spread:
- 1 can of tuna in oil, drained
- 2 eggs hard boiled
- 2 tbsp cream cheese
- 2 small pickled cucumbers
- pinch of salt and pepper
Chop eggs and cucumbers and mix with the rest of ingredients in a bowl. If you like your spread more sweet, add 1/2 of small apple.

Moving is exciting, isn’t it? New places, new people, new possibilities. But then the day comes when you wish to bake something delicious, your oven does not contain a baking tray and you start to miss home. You organize it somehow and life is beautiful again.

I made some delicious and sweet things for breakfast. Some of them were time consuming and cost me a lot of effort. One of these things were french toasts. You know why? Because I made my own brioche. Sounds easy? Not really as I did not have a mixer and I had to mix dough with my own hands. It took me three attempts to finally made one that grew properly.

I had to make my taxes in 3 countries this year, don’t ask me why/how/WTF, I can’t even say a word “taxes” anymore. I just hope that it’s all good. This forbidden word equals stress in my case. When I stress out, I eat sweets, but not any sweets, I eat super extra good sweets.

What is the best possible breakfast option? I would say breakfast with friends. Especially when you miss them so much every day. It also helps when they like what you’ve prepared (it makes my heart sing).

Do you remember me writing that I’ll have a break from work and traveling for a while? So I’m in Warsaw! It’s my home city and I love it. If you’ll ever have a chance to visit Warsaw, just do it. I’m obsessed with one song and I listen to it over and over again. I have this strong feeling that the more I like it, the more Mr T starts to hate it. Why boys are not as us girls and they don’t feel like listening to something all the time? So I’m trying to be understanding and I wear headphones to ease his pain. He tells me that me singing is not a good substitute. Boys, it’s impossible to make them happy.

I went to Rome for few days and I ate as much pizza as never before. It was delicious! Ok I haven’t been eating only pizza, there was other yummy food as well. I think I’ve gained on 2 kg at least. I came back, few days passed and I couldn’t stop thinking about pizza. I’ve made a breakfast pizza some time ago and you must believe me, it is a perfect start of a day. This time I wanted to try something new but in a similar spirit - stromboli. It looks and sounds italian to me, but apparently it’s origin come from United States. Surprise surprise :)
