There is this saying that if something sounds too good to be true, most probably it is. Well, listen to this - it takes 5 minutes to make a bread and 30 to bake it. It’s so good, that it disappears straight away. I’ve found the original recipe on My Kitchen Affair blog, I made few changes and here it is.
You will need:
- 100g buckwheat flour
- 150g all purpose flour
- 1/2 tsp soda
- 1/2 tsp sea salt
- 2-3 sticks of rosemary, shredded
- 1/3 cup raisins
- 1/3 cup almonds, cut in small pieces
- 200 ml buttermilk
Heat your oven to 200*C (400*F) with a baking tray inside. Place everything in a bowl and mix so the ingredients combine. The dough will be sticky, it’s ok. Place the dough on a floured surface and create a bowl. It’s ok that there is a flour on it. Place it on a hot tray covered with a baking paper, cut a deep “x” on a dough and bake for about 30 minutes.

It made my day. I had eaten baked oatmeal before, but never as good as this one. I mixed oats with roasted strawberries and bananas, it had an influence on a taste. Hazelnut milk and coconut milk helped as well. But I think that a chai tea made a trick. I took the recipe from Family Fresh Cooking blog and I must tell you that it is a family recipe. But with this quantity I am glad that my family contains only 2 people. Thanks to it I did not have to share it :D If I’ll ever make it for more people, I’ll double or triple the ingredients. It was that good.

It’s May! Can you believe in it? One month ago it was cold, snowy and dark. Today it could not be more beautiful. It makes me very happy.
