I had to make my taxes in 3 countries this year, don’t ask me why/how/WTF, I can’t even say a word “taxes” anymore. I just hope that it’s all good. This forbidden word equals stress in my case. When I stress out, I eat sweets, but not any sweets, I eat super extra good sweets.

I’m not crazy for kitchen gadgets. I usually don’t have them. I got my first kitchen mixer one year ago, so not too fast. But there are things I really want to have, like Chemex (I love it) or an iron pan. After a long time of wanting (I told you, I’m not too fast) I got my first iron pan. It is heavy, perfect for two and very pretty. I went through hundreds of recipes and finally I ended up on Donna Hay’s site. I found this amazing recipe including mozzarella, mushrooms, rosemary and the iron pan.

When I was a little girl I used to beg my mother for scrambled eggs. I could eat it each day but there was one rule. It had to be just eggs, nothing more, maybe except for salt. When I was a teenagar my older sister used to feed me with eggs combined with each possible vegetable that was in the kitchen. I did not love it but I liked it.

Do you remember me writing that I’ll have a break from work and traveling for a while? So I’m in Warsaw! It’s my home city and I love it. If you’ll ever have a chance to visit Warsaw, just do it. Last week I spent in Warsaw, where I’ve been celebrating a birthday of my friend Asia, yes, we did it a whole week. And now I miss my friends even more. As a part of surprise we’ve made a birthday breakfast that contained prosciutto, rucola, cherry tomatoes, mozzarella, a little bit of an olive oil and delicious toast. And if you want it to taste even better, add a bunch of cool people.

Mushroom toasties

I am back after a longer break due to longer vacations. I’m still a little bit jet lagged, but I will definitely post some pictures of my breakfasts in Thailand. These were not typical for sure but sooooo yummy! Today, to celebrate my reunion with Amsterdam, I made some quickies. You can prepare less than 8, just reduce the amount of cheese and mushrooms.

Sardines on toast

Fish is great, I love it for lunch or dinner. Thanks to cans, it’s also possible to make a quick breakfast out of it. I remember when I’ve realized what’s the size of a tuna. I was shocked. A few days ago I’ve found a great recipe for sardines. It is so easy, that I just had to try it.

Toast with ricotta and roasted tomatoes

I like the combination of simple tastes. A cheese sandwich (white or yellow) with tomato is one of my favorites. But few months ago I’ve started to play and experiment with food and to look for an interesting recipes. So the simple sandwich with cheese and tomato turned into a sandwich with ricotta cheese, mustard, roasted tomatoes and chives. Oh roasted tomatoes - it’s flavor and softness makes it so special. And if you mixed them in olive oil, balsamic vinegar and add a little garlic, the effect is simply amazing. A bit of mustard in combination with ricotta stimulate your taste buds. So why not get up in the morning, put tomatoes in the oven for 25 minutes, take a bath, and then try them on toast? Taste guaranteed! :)

Toast with mozzarella and cranberries

I’ve been having toasts a’la Jamie Olivier for breakfast for years now. I really like it, especially it feels light like a cloud. It reminds me home wherever I am plus it’s easy to make. Try it, maybe it will be your breakfast as well :)
