I do not live in Amsterdam anymore, but I still love Dutch baby pancakes. It is easy to make, looks awesome and the way of serving is interesting. One pancake is good for two people and you can put whatever you want on it.

I had to make my taxes in 3 countries this year, don’t ask me why/how/WTF, I can’t even say a word “taxes” anymore. I just hope that it’s all good. This forbidden word equals stress in my case. When I stress out, I eat sweets, but not any sweets, I eat super extra good sweets.

When I was a child, among me and my friends there were three favorite breakfasts: pancakes with apples, crepes or pancakes with yeast (racuchy). The choice depended on parents or grandparents who made it in a particular home. In my house we were eating pancakes with apples. I used to terrorize my grandmother to make it as often as possible. I could eat it for breakfast, lunch and dinner (sometimes I did). My mother used to make crepes but it was nothing in comparison to my grandma’s pancakes (sorry mom). I loved them.

Welcome to my dream, yes literally. I am still jet lagged and I feel like living in a dream or rather standing next to my body most of the time. But I also have good moments, usually very early in a morning, like 4 am, when it’s still dark outside, apartment is covered in a total silence and I can drink my coffee and enjoy alone time with my sweet cat Ryszard. There are things you can get addicted to and I am not talking about a devil called internet. I mean pretzels. Yes, pretzels, soft, warm, fresh, the ones I buy almost every day and have with my coffee or without, with salt or butter or cinnamon… There are many variants. In Berlin there’s thousands of pretzels and I do buy them,. I love them in a strange kind of heart shape but I prefer the long ones, that look like a small baguette. For me it’s like eating a salty fingers, so small, delicious and can’t harm you.

I did approach the topic few times, 5 to be honest, each of them with a different recipe, each of times I failed. I must say that brioche is one of the most difficult cakes / breads that I’ve ever baked. Since my attempts left me not in the best mood, I made myself a promise the one day I’ll succeed. I had to wait a few months (seriously, I had to), but the time for another attempt came. I decided to follow a professional - Julia of “Baking with Julia”.

I am a lucky person. I have Mr T., who is awesome and rocks my world, I have Ryszard the cat which is in need of love and fun 24/7 and I mean it, plus I have friends who invite me places from time to time. I was silent for a moment (I know, again), but I was lucky enough to spend some quality time on a polish seaside, in a countryside with some amazing people plus Mr T. I missed Ryszard like each minute, but (and it must stay between us as Ryszard can never hear about it!) we’ve met some crazy cats that went with us on a beach. To picture you what I‘ve experienced, I must ask you to imagine a beautiful house with a fireplace and comfortable armchairs around, located in a small village, 200 meters away from the sea. Plus a beach covered with snow and ice, where you walk through the forest. Can you picture that? If yes, welcome to my paradise. If you can’t, as you’ve never seen a beach during a winter time, I’ll post some pictures on my travel blog and you can check it later on.

My dear friends, do you miss summer (at least ones from Europe)? I do. I went for a walk yesterday, a long cold walk. It was beautiful of course, but when I’ve came back home, I had to heat some wine with cloves and spices to warm myself up. I’ve automatically started to think about all this times when I wanted to wander around the city during the hot days but kept postponing it. Yesterday I’ve decided not to do it anymore and whenever I’ll be in need for a walk, I do it. At least this is what I’m thinking today ;)

I went to Rome for few days and I ate as much pizza as never before. It was delicious! Ok I haven’t been eating only pizza, there was other yummy food as well. I think I’ve gained on 2 kg at least. I came back, few days passed and I couldn’t stop thinking about pizza. I’ve made a breakfast pizza some time ago and you must believe me, it is a perfect start of a day. This time I wanted to try something new but in a similar spirit - stromboli. It looks and sounds italian to me, but apparently it’s origin come from United States. Surprise surprise :)
