Almond and Banana Muffins

What makes this recipe so special? A Batter doesn’t include flour! And taste is so amazing that you won’t be able to stop eating. I’ve found the recipe on a Honest fare blog and got so excited, that I had to make them. Believe me, you will be excited as well 😉

You will need:

  • 250g sliced almonds (plus some extra for topping)
  • ½ tsp baking powder
  • 2 eggs
  • 40g sugar
  • ½ tsp cinnamon
  • 3 bananas (plus extra slices for topping)
  • 2 tbsp unsweetened cocoa powder

Preheat oven to 150°C.

Grease muffin pan and put some baking paper forms to each hole.

In a food processor (or blender like I did) whizz almonds and baking powder (do it as long as it takes to ground everything nicely, but not longer, because you’ll end up with an almond butter) and set aside in a bowl.

The second step is to whizz eggs, sugar, bananas and cinnamon until it gets a form of thick fluid. Connect dry and wet ingredients.

Place 1/3 of batter into separate bowl and stir in cocoa powder. 

To create muffins with the chocolaty center, first fill out ½ of the form with original batter, then do your dollop of cocoa batter and then pour remaining original batter to cover cocoa. Top each of them with thinly sliced bananas and almonds.

Bake for about 30-35 minutes.
