Almost Crepes Suzette

This is something that will make a difficult day way better.

I’ve been thinking about making Crepes Suzette for ages. It just seemed so complicated that I always managed to find something more important to cook. It took a visit from a friend and me trying to make something special. It turned out that this recipe is so easy, that I repeated it in the evening for another friend. You just need to have crepes in your fridge and preparation of sauce takes a moment. I did not add an alcohol and did not fire it up, so it’s almost Crepes Suzette. It turned out extremely delicious though.

This weekend made me think about adopting parents or grandparents. Mine live too far away from me, which means, that it’s me and Mia when Tomasz leaves somewhere. This weekend he went on a 3 day long bachelor party and left me with Mia. I like to stay with her, but when she’s teething it’s a totally different story. She is sensitive, do you know what a sensitive child means? It means that everything may cause moaning, literally everything. She started to cry like crazy because I didn’t let her pour litres of water outside of a bath tube. I get that she’s in pain and I’ll do everything to ease it. But believe me, in days like this you’re dreaming about 10 minutes of silence. And then the night comes and she does not want to sleep because it hurts and she can’t fall asleep. It means that I don’t sleep as well, obviously. And the next day I have to work and take care of her. After a weekend like this I don’t remember what my name is. It would be so much easier to have family around, so you have 30 minutes to go for a walk in a silence. Ear plugs are my best friends lately.

And now the funny part. Monday has started, Mia went to a kindergarten and I miss her so much that I want to go and pick her up. How crazy is this! Sometimes I have a feeling that moms are brainwashed and when it gets super difficult and then easy again, we think that we can go through anything. But then teething comes. Can’t wait to see what comes next…

Recipe

YOU WILL NEED FOR CREPES:

  • 1 cup flour
  • 1 cup milk
  • 2/3 cup water
  • 2 eggs
  • salt
  • 3 tbsp olive oil

YOU WILL NEED FOR SAUCE:

  • 3 tbsp sugar
  • zest from 1 orange
  • juice from 1 mandarin
  • juice from 2 oranges
  • juice from ½ lemon
  • 3 tbsp butter
Place all the ingredients in a bowl and mix it well. Fry over a medium heat. There’s oil in the dough already, so you don’t need to use any oil for frying. Let the crepes fry well, so it will disconnect from a pan itself, then turn it on the other side. Usually the first crepe always goes wrong, so try to make the other one straight away and don’t give up.

Heat a frying pan over a medium heat. Pour sugar, add mandarin juice and zest from an orange and let it caramelise. It will take just a moment, like 2 minutes. You don’t want to burn the caramel. Add orange and lemon juice, then butter. Let it cook for a moment, so it mixes well. Place first crepe in a pan, cover it with the sauce and fold in a triangle (you can see how it looks in a picture). Do the same thing with three more. Let it sit in a pan for a moment. This recipe goes for 4 crepes. But you can place your ready crepes on a place and use the sauce for 4 more crepes. At least this is what I did and it worked out well.

I served my crepes with citruses baked in 150*C.

The way you see the world challenges me to seek out the details a little more. Also, crepes suzette is one of my favorite snacks more than it is breakfast, and I love it with a dab of whipped cream cheese & honey. Hope all is well on your side of the pond.

    I took care of my great-niece a few weeks ago during her teething period so I can imagine “a little” of what you are going through. But then I was able to give her back to her mother after a few hours. 🙂 Hang in there Marta! Crepes are my favorite breakfast and these crepes look decadently delicious! Only you would come up with adding the baked citrus. Takes a great dish and makes it fabulous!

      Thank you so much, words of support mean a lot. I had a very short night sleep again tonight. But I don’t feel bad about myself, my poor Mia is in pain. We were watching Bambi till midnight and then she finally fell asleep. She’s such a brave girl.

    Oh this sounds so delicious! I just love crepes with a citrucy sauce <3 I really enjoy reading your texts about being a mom btw. It will still be a couple of years probably before I become one myself, but the thoughts about how it will be are already here. I’m kinda scared about the vast tiredness and managing everything at once, even though I know you get through it somehow and that it will be worth it. It’s soothing in a way to read about what it’s like for you. Both the ups and the downs. So thanks for sharing your everyday experience with Mia!

      It’s not easy, oh how I know it right now. But it’s worth it. Your life will change completely, that’s for sure. I thought that my won’t. I was wrong, hahaha. But Mia is amazing, I not only love her, I really like her. She rocks my life!

      it would be so beautiful, I can imagine all the possible scenarios – me taking a shower without playing peekaboo with Mia, me eating a breakfast without Mia smashing it on my face, me walking in silence, not running after my crazy kid…
