Amaranth Waffles with Physalis

If I’m not active in my social media for the next couple of days don’t be alert. Most probably I’m having a massive hangover and I totally appreciate it! Big hugs and have a drink!

As you all know since, almost 9 months I am a proud and sometimes a bit frustrated mom of super extra cool Mia Sydney (yes I did name her after the city). For almost 9 months I did not spend a day without my kid. She’s always around. You most probably have noticed that I mention her in each post. But today is a special day! Tomasz took Mia over to his parents who actually live in another country and I have two days just for myself. What should I do with all this freedom? The main plan is drinking and dancing. A friend told me that I finally have time to catch up with my work, but no, it will definitely be the time concentrated on drinking and dancing. I may even bike around Berlin on my bike (I miss it like crazy). It makes me so happy! Yes, drinking alcohol has sense today, as I don’t have to wake up at night to take care of teething Mia and I can sleep till like afternoon. Did my parents feel the same way? Do you guys get totally crazy when your kids are not around? If I’m not active in my social media for the next couple of days don’t be alert. You will need for waffles (for 2 people):

  • ¼ cup amaranth flour
  • ¼ cup millet flakes
  • 1 tsp chia seeds
  • 1 banan, smashed
  • 1 tsp baking powder
  • ½ tsp baking soda
  • pinch of salt
  • ¼ tsp cinnamon
  • 1 tsp palm sugar
  • 2 tsp coconut oil
  • ¼ cup millet milk

For physalis sauce:

  • 1 tsp butter
  • 1 tsp palm sugar
  • juice out of one orange
  • about 50g physalis
  • ½ tsp potatoe starch

Place everything for waffles in a bowl and mix well. Then you know what to do with your waffle machine 🙂

Now it’s time to prepare your physalis sauce. In a pan, melt butter and add sugar. After a minute add orange juice and physalis. Fry for a few minutes, so physalis will get soft. Add potato starch, so it will inspissate.

Serve waffles with sauce.
