Dreaming about my trip to New York over bruschetta
This is one of these super easy to make recipes. It looks pretty good, tastes amazing and you need to make it! I do eat a lot of sandwiches lately, but it’s because it’s getting cold in Berlin and I have no idea how it explains me eating more sandwiches, but let’s leave it here. You may look at the pictures and think that these are actually waffles, but you will be mistaken. These are sandwiches 😀 I made kind of a herbed french toast and fried in a waffle maker. It turned out crispy and it was definitely faster. I was just waiting for a light to change from red to green.
The inspiration came from super awesome Lady and pups blog. I saw her version and tiny tomatoes looked so pretty that I had to make it straight away. When she was eating her’s, she was in an emotional hell (check her post), when I ate mine, I was fulfilled with excitement and thoughts about New York. Because I’ve been to New York! It’s been magical ½+1+½ days and I hope that in a future I’ll return for longer, at least a week. For this time it was totally worth it. This city is so inspiring and breathtaking, everything I’ve imagined and saw in movies. I’m a big 90’s movies fan and there are many made in New York, so it all felt very familiar:
– the first yellow cab I saw made me jump out of excitement (both gentlemen were trying to convince me that I’m obliged to tip 50% of the value of the ride),
– metal fire escape stairs – OMG it’s for real!
– Central Park – just like I remember from numerous scenes.
– Statue of Liberty – it’s so small, how come?
– Food – crazy delicious,
– restaurants – so pretty.
The funny part – I had no idea that I saw so many NY movies. But as a proper tourist I was leaving my hotel at 7 am and going to discover whatever possible. You can imagine that during my flight back home I was sleeping through everything, meals included.
New York, you’ll be missed and I’ll be back.
You will need for toasts (for 2):
- 4 slices of bread
- 2 eggs
- 1 tbsp sour cream
- 1 tsp oregano
For baked tomatoes:
- 2 handfuls tomatoes – cherry size, orange, yellow and red
- 1 tsp olive oil
- 1 tsp balsamic vinegar
- pinch of black salt
- pepper for taste
- few mint leaves, torn in small pieces
- pinch of sugar
For serving:
- yellow cheese you like
Start with tomatoes. Place them on a baking tray covered with a paper and bake in 200*C so their skin will crack open.
In a bowl mix eggs, sour cream and oregano. Place each slice into it, cover them from both sides and let it soak the egg mix just a little bit. Place each slice in a waffle maker and bake for a few minutes, until crispy.
Take tomatoes out of your oven, let it cool for a moment and skin and peel each one. You should ask whoever is at home to help you. Then place all the peeled tomatoes in a bowl, add olive oil, balsamic vinegar, salt, pepper, sugar and mint leaves. Mix it well.
Serve each toast with yellow cheese (like Gouda or cheddar) and a lot of tomatoes.

For your bruschetta… beautiful, healthy and delightful! Love the way you cooked the egg soaked bread in the waffle iron. I’ve got to try this. Oh this looks wonderful, New York is on my list of places to visit and I want to go for all of the same reasons as you. I think we must be a similar age as I grew up on 90s films, friends and sex and the city.This cherry tomato toasts look amazing, such gorgeous shots of the food and your travel.

OMG your kid is adooooorable, just look at that face, she does look like she is a handful ahahah!! SO cute! I would eat this, hell yeah, I would eat this as an entrée on a Saturday night with a good glass of red on the side and then gobble some more food and say I’m too full and I shouldn’t have had the entrée, but it would have been impossible not too because tiny tomatoes!! Love this!!

hahahah, I went there just for a dinner. Very fast trip. But it was my first time and I am so impressed with this city. I think I was excited about each street and each building.
