I am a sweet tooth. I’m trying to fight with my urge for sugar and cheat with healthier options. It’s not easy at all, whenever I see chocolate I feel like grabbing it. But it is possible to make something delicious and healthy. Like this apple fritters. It will be more healthy without a glaze, but come one, you can pour just a little bit, just for a taste. I found this recipe on Erin’s healthy blog – Texanerin. It is definitely too good to be healthy.
You will need for fritters:
- 1 cup oat flour
- 2 tbsp coconut flakes
- 2 tsp baking powder
- pinch of salt
- 1 tsp cinnamon
- ½ tsp ground nutmeg
- 6 tbsp apple juice
- 1 egg at room temperature
- 2 apples, diced
- oil for frying
For glaze:
- ½ cup powdered sugar
- 2 tbs apple juice
- ½ tsp cinnamon
- ¼ tsp nutmeg
Heat an oil on a frying pan and mix all the dry ingredients for fritters. When oil is warm, add apple juice, egg and apples to the dry mix. Combine ingredients and start frying. I put 1 tablespoon of dough for each. Fry until brown on each sides. Because you’re using an oat flour you need to flip it in a very delicate way.
When fritters are fried mix all the ingredients for glaze and pour it over.
Enjoy, Marta
