Sometimes a good small quiche and some veggies is all you need.
We went to the aquarium yesterday and since that moment I have a very strong urge to go somewhere. There is something unique in water and underwater world. I can stare on jelly fish for hours, sharks are majestic and it all makes me think of a beach. I am not a beach person, I do not like to take a sun bath or hang out on a beach. I love it at 5 am when it’s empty or while the sunset, when you can see all the amazing colours of the sky.
I love the ocean but I am scared of it, as one time, when I was super young I almost drowned. I do swim, I do go into it, but I have a huge respect towards it. I did learn how to dive, I did it many times, but I am still scared of it. That’s why the aquarium is my comfort place. I can see all the beauty without facing the fear.
The ocean is something that gives me a lot of happiness. I did voluntary work with wild dolphins in Australia, where I was crying a lot out of happiness. I did swim with huskies in New Zealand. I also saw a whale, swam with whale sharks (ok, tried to follow them, but obviously they lost me within 30 seconds), ended up inside of fish tornado, swam with wild turtles in the Philippines and so much more. I remember when I went for the first dive when I shaved my head, it was a crazy new experience, like if I never felt water before. My special moments last year were all on a beach at 6 am, when Mia was sleeping and I was looking at waves with a cup of coffee, these were mornings when I felt pure happiness.
My biggest dream is to go on a cruise from Europe to Australia, so I can live on a big boat for weeks. By now I know that I’d get stuck in a playroom with Mia, just like during our ferry ride from Finland to Germany. But at night I could sit and observe water. It’s January and a new blank book of the year in front of me. I hope that I can write many pages about an ocean in it.
My blog is about delicious and easy to prepare breakfast. It’s because I like it easy and yummy. I also like when food does not include too many ingredients or spices. I am constantly experimenting with it and it may change of course. I also think that weekend should be special. We should plan it a bit, not only rest at home, but go to a forest, or over a lake, cook something special. It’s our time. I think that this quiche is special. It’s easy to make and delicious. You can place whatever you like on top, just like I did, to spice it up. I used small pie forms, so each quiche is for one person. But I think that it could also make a breakfast for two, unless your partner eats like Tomasz. Then you definitely need 2 or 3.
YOU WILL NEED (for 2):
- 1 cup flour
- 110 g butter, cold, cut in small cubes
- pinch of salt
- ¼ cup cold water
- 2 eggs
- 250g cream
- 10 asparagus, steamed
- salt and pepper
Heat an oven to 180 °C.
Cut the dough in half, roll both parts and place in 18cm pie forms. Make holes in the dough by stabbing it with a fork. Bake for about 10 minutes.
Meantime steam asparagus, so it’s soft, divide it between 2 tarts. In a bowl, mix the cream and eggs together and season with salt and pepper. Pour the egg mixture into the tarts. Bake for about 30 minutes, or until the cream mixture has set.
Serve with baked tomatoes, egg, coriander and maybe bacon :).

Quiche for me is heaven, I am so greedy with it. I also nearly drowned when I was about MIa’s age, so now I am scared of water. I can’t swim properly, I can dive awkwardly, and I would never for the life of me go on a cruise for fear of drowning ahahahah! My pipe dream is the Orient Express, actually: rails and land, no water on sight. But odd as it is, I cannot stand the thought of living far from the sea, I need the ocean close by, or at least a large water surface, like a huge lake or a fat river. How strange is that? You must tell me what you thought of my novels that you’ve read, please. Be hard and blunt!!

I am almost done with the first one 😀 It takes me ages, but not because I don’t like it, but because my Mia is nr one, then work and Tomasz and then I have like 20 minutes per week. But for now I must write that I love the story and that I think it will make a great movie 😀
