There is a soft spot in my heart for pancakes in general. Not because of childhood memories or a life changing event, but because it’s so extremely good!
There are recipes that were created to be recreated all over again in many different versions. One of them is the Austrian pancake. I made it so many times that I cannot recall it. There’s always a place for a different version. You add a bit of coconut flakes, or chia seeds, or vanilla, or apples, or berries, or… apricots. Today I’d like to present the latest. The recipe comes from Małgosia Minta book, which is all about breakfast, how cool is this! This is one of these recipes that you want to try. I didn’t change anything, it is like it was.

The only thing you need is a good recipe, from there you can go further and experiment. You have so many amazing options that you could eat them each day for a year. Most probably longer, but I don’t want to sound over dramatic over here.
Right now I’m sitting on a porch of our small house in Thailand and writing this post makes me so extremely hungry for pancakes. We just came here a couple of days ago and most probably I won’t have these babies for quite some time. But I do have an amazing amount of delicious food and I’m definitely sharing it soon. Traveling with a kid has a totally different meaning in Thailand. It’s so beautiful how people react on Mia. Everyone smiled, talks to her, want to give her a small souvenir, hug her. Whenever people see a baby, they smile. It’s such a beautiful experience. More to come 🙂
YOU WILL NEED:
- 6 apricots
- ½ vanilla stick
- 6 tbsp brown sugar
- 4 eggs
- pinch of salt
- 2 tbsp white sugar
- 3 flat tbsp flour
- 2 tbsp raisins
- 1 tbsp butter or 1 tbsp oil
- icing sugar
Separate egg whites from yolks. Mix whites with a bit of salt, so it’s creamy and stiff. In another bowl, mix yolks with sugar, so it gets a lighter yellow colour. Mix both bowls together in a delicate way. Add flour, raisins and mix again.
Heat butter or oil on a pan, pour the egg mix in and fry until it comes togeter. Cut in small pieces and turn on another side. Fry untill it gets golden.
Serve with icing sugar and caramelised apricots.

Hi MartaYes, the pancake was utterly delicious and we can’t wait to make it again.1. I wasn’t sure what to do with the oil so I added the oil to ‘Heat butter on a pan’
2. The recipe asks for ‘2 tbsp white sugar’. The first step is to ‘Heat sugar on a frying pan so it melts’ so I did that… and then later on it says, ‘In another bowl, mix yolks with sugar.’ ‘What sugar’ I cried… ‘I have none left’
3. I started to cook the pancakes with the apricots on, but realised it would be tricky to ‘Cut in small pieces and turn on another side’ so I took them out and added them at the endHope this helps, and thanks for sharing this recipe with us.All the best.-
