Avocado Baked with an Egg

I have a friend who loves avocado. He told me that he treats it as a natural butter and always have it in his kitchen. Even more, we went on a road trip together and he took it in his suitcase. I like avocado as well, it’s a nice addition to a breakfast. Lately I found an interesting recipe on White on rice couple blog and I was waiting for avocado with a reasonable price to use it. I found my avocados. The first one I ate with a spoon, the second one was prepared in more classy way. It looked good with herbed toasts but it also tasted great.

You will need:

  • 1 avocado
  • cuckooflower
  • sausage
  • 2 eggs
  • salt and pepper
  • 2 slices of bread fried on 1 tbsp of oil with herbs

Cut avocado in half, remove seed and scoop a bit of avocado, so you can fit more egg into it. Break egg into a bowl, using a spoon place yolk in avocado, and then carefully start to add white (if your egg is too big you won’t manage to add all the white). Season with salt and pepper. Heat an oven to 180*C. Place avocado with egg in a baking dish, so it won’t tilt and egg will stay in it’s place. Bake for 15-20 minutes or until white comes together. Meantime fry sausage cut in small pieces on 1 tablespoon of oil. When avocado is ready place it on a plate, add sausage and cuckooflower, season with salt and pepper and serve with herbed toasts.

  • i’ve been seing this recipe on many blogs already so even though I wasn’t convinced of heating an avocado I still gave it a go, being marta’s blog, it couldn’t be that bad.well, to tell you the truth, it was!! what a bad way to start my day this morning…
    the egg and avocado cancel eachother out and don’t let any of each ingredient shine through. it just tastes bland and no amount of sausage will remedy that! hot avocado is just about an insult to avocado. in my opinion of course.so if you’ve got doubts, i suggest readers NOT to go through with this recipes. you’d be spoiling an egg and a perfectly yummy, fresh, rich avocado.that said, the blog is great and the pictures too and the recipes are inspiring. nothing against the blog, just wanted to warn readers about the idea of pairing egg and hot avocado.bon appétit! and thanks for the great blog 🙂

      NO IT IS SOFT BUT SMOOTH, IT IS LIKE A BAKED POTATO. I MADE THEM FOR MOTHER’S DAY BREAKFAST AN EVEN MY GRANDKIDS LOVED THEM. BUT THEY WILL EAT ANYTHING PUT IN FRONT OF THEM

    Oh, I saw something like this a while back… I wanted to try it but the idea of a baked avocado made me balk a little. Does it taste fine? I never had a “hot” avocado before… just warm-ish in soup, so I can’t imagine how it turns out once it’s been in the oven…
