Sometimes simple solutions are the best ones. I baked a big loaf of bread again and, well, we eat it. I experiment with sandwiches, try it warm and cold. But whenever I can’t figure out what I feel like, I put avocado on a slice of bread, add tomato and a goat cheese and enjoy it while thinking. Do you like this combination of flavours? It is delicious and refreshing, especially when you add a bit of mint (always a good idea!).
I fell in love with avocado few years ago in Sydney. My friend used to repeat that it’s a natural butter and he was caring it around in his backpack. It was also very easy to find a treat with it in Sydney’s cafes. This year I had an amazing sandwich in The Grounds of Alexandria and I’m still dreaming about it from time to time. That’s why I’ve been trying to recreate it. Homemade sourdough bread – checked, organic tomato and avocado – checked, goat cheese from a farmer – checked, mint from my little windowsill garden – checked. It couldn’t go wrong.
You will need for 1:
- 1 avocado
- 1 tsp lemon juice
- 1 tsp chopped mint
- small pinch of chill flakes
- 1 tomato
- goat cheese
- salt and pepper
In a small bowl smash avocado, add lemon juice, chopped mint, chill flakes and mix it. Toast a slice of bread and spread avocado mix on it. Add slices of tomato, sprinkle with goat cheese. Season with salt and pepper. You can add fried egg if you like, it goes pretty well with avocado.

The Grounds of Alexandria made me fall in love with avocado as well! I’m so glad you got to try it here in Sydney. I’ve never considered adding chilli flakes but I am keen to add this ingredient the next time I’m making avo on toast. What bread do you recommend eating it with? I’m the biggest avocado toast lover ever. My current favorite is based on the one I had in a lovely little cafe in Copenhagen, (http://tlt-thelittlethings…. so good! This version with goat cheese sounds like a great variation that I need to try asap!
