I am a bad bad girl, as I eat so many delicious things that soon my running and exercising will not be enough. I blame Sydney. My friend told me that Sydney is a capital of breakfasts and he was right. There’s so many great places and so much of delicious food, that it’s difficult to control myself. There is one meal I need to mention, easy and obvious, but we have a tendency to forget about recipes like this one. I am talking about a bacon and egg sandwich.
The base is easy – fried or baked bacon and boiled or fried egg. You can get wild with additions like kale, tomato, spinach. I chose ciabatta, but any bread will work. You can spread yoghurt on it – awesome, or rub garlic and pour an olive – amazing or spread a mix of mayonnaise and mustard – sooooo good. There’s so many possibilities and you can choose your favorite 🙂
I have to admit that I had three of this sandwiches during one day. Let’s not discuss it, please 🙂 I liked it so much that it was difficult not to make a new one plus I really wanted to try out each bread spread 😉 I am home alone, as all the people from my home (I share it with 5 guys and one girl) went for a trip to Whitsunday’s Islands. And you know what it means – I don’t care if there’s a yolk running down my face, I just keep enjoying my homemade meals.
You will need:
- bread roll
- bacon, few slices
- 1 egg
Few additional options:
- kale
- tomato
- garlic and an olive oil, or
- yogurt, or
- 1 tbsp mayonnaise with 1 tsp mustard
Fry or bake your bacon and dry it with a paper towel. Bake an egg for 4:30-5 minutes so a yolk is runny or fry it sunny side up on a pan. Toast your bread and choose one of your options: rub garlic over it and pour some olive oil, or spread some yoghurt on it or spread a mix or mayo and mustard.
It’s so worth trying, especially if you’re a fan of eggs with bacon for a breakfast.

I have to say one thing though.. If you think Sydney is the breakfast capital, wait until you get to Melbourne! Melbourne is the city of cafes + brunches and the best coffee in Australia. Happy to send you a list of suggestions if you’re ever coming this way 🙂
I would have stayed behind for the sandwich. Have you ever tried spicy hummus as a sandwich spread, I think it might be good on this, just might have to find out for myself. I’m trying to be good with yogurt in the a.m., but bacon sounds so good.

In the UK bacon and egg sandwiches are greasy and salty. I love the idea of different options like boiled eggs and kale – these are definitely something I will be trying out soon!
