Bacon Granola with Yogurt and Honey

Untypical, yet interesting.

This is one of these recipes that made me think that I’m pregnant again. I was going through my blog and I saw a recipe for delicious fluffy pancakes with bacon and maple syrup. It was a great one. I can still remember how surprised I was that bacon and maple syrup go well together. As a result, I started to day dream about granola with bacon. I could add a lot of nuts, coconut flakes and serve it only with yogurt and a bit of something sweet like honey or agave syrup. So I did it and yes, it is amazing. I made bacon very crisp and it’s crazy how well it goes together with oats. It’s definitely something to try. Then I started to take pictures and I had few accidents on the way – jars refused to cooperate, but it was fun. It’s good to make a mess in your kitchen from time to time.

Recipe

You will need for granola:

  • 2 ½ cup rolled oats
  • 1/3 cup chia seeds
  • 2 cups coconut flakes
  • 2 cups nuts, chopped
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/3 cup honey
  • 10 stripes of bacon

For serving:

  • yogurt
  • honey
  • honey or agave syrup
First, take care of your bacon. Heat your oven to 120*C and bake it on a baking paper for about 30-40 minutes so it’s crispy. Sometimes you need a bit more time (like 10 more minutes). When it’s ready, dry it with a paper towel and cut into small pieces.

In a bowl, mix all the ingredients (bacon included), then spread it on a baking paper and bake for about 30 minutes. If you like it more crispy, then 40 minutes. Mix granola each 10 minutes and observe, as each oven acts a bit differently and you don’t want to burn it.

Serve granola with yogurt and honey.

    O.K. now you’ve done it. This is an over the top granola! Bacon and coconut flakes are unusual ingredients for a granola, and I love them! Great recipe!

      This is a good question. I put mine in a jar. Bacon is well baked, so I think two weeks will be ok. But mine bunch is almost gone after few days 🙂
