The eggs with ham I made few days ago were so good, that I’ve decided to prepare them again but a little bit different, with cherry tomatoes, goat cheese and basil. You don’t have to add ham 🙂
What you need:
- 1 egg
- soft goat cheese
- cherry tomatoes
- fresh basil
- 2 slices ham
- 1 tbsp cream
- salt and pepper
- a bit of butter
Preheat oven to 180°C.
To start with, roast cherry tomatoes in the oven with a bit of salt and pepper on it, until soft (around 15 minutes). Grease baking dish with a butter. Put inside slices of ham and goat cheese. Separate white from yolk and mix white with a spoon of the cream. Pour the mixture over the goat cheese and sprinkle with salt and pepper. Locate yolk in the middle of the dish, put some basil leaves and tomatoes around and bake for around 15-20 minutes, till egg is cooked.

you should try soft-baked egg with roasted pumpkin, little pieces of toasted bread, pieces of cheddar and a bit of cream. it’s just sooo good!
