Baked Eggs with Bacon and Parmesan

I wasn’t very active for the past week, that’s all because I’ve decided to take advantage of summer and Berlin.

I wasn’t very active for the past week, that’s all because I’ve decided to take advantage of summer and Berlin. I went to many strange places, I had a coffee in a garden growing out of the box, took a boat trip around a lake, biked through narrow empty streets. And now I’ll have another unusual week, because Mr T. is not here. It means I can do whatever I want and eat whatever I want and listen to the music at loud during the day. I started my day quite early (his flight was at 7am so he was up at 3:30am) and after a cup of coffee I had enough power to make a nice bite for myself. I made baked eggs, but not typical ones, it kind of looked like a fried egg but was much better. I am so happy that I found this eggs in clouds. And you know what, I think that Mr T. regrets leaving and not having this breakfast with me. 

You will need:

  • 2 eggs
  • 3 slices of bacon, cut in small pieces and fried on a pan
  • 2 tbsp parmesan cheese, grated
  • chives
  • pepper
  • pinch of salt

Heat your oven to 220*C. Separate whites from yolks. Place whites in a bowl and mix it until it gets fluffy. Put yolks in two separate cups on a side. Add cheese and bacon to beaten whites, mix it and place two equal portions on a baking paper. Bake for 3 minutes and then place yolk on each of them and bake for another 3 minutes. When ready season with salt and pepper and sprinkle with chives.

    just wanted to pop in and say — i found this recipe through http://www.brit.co/valentin…, and just made it for valentines day this morning for my boyfriend. he LOVED it and it was so easy to make! i couldn’t fully whip the eggs because i don’t have a mixer, so i ended up just frying the whites and putting a lid on the pan, then adding the yolks an putting the top back on. i also whipped up some chopped potatoes to add on the side. thanks!

    I miss those kind of weeks now…..my kids are in middle school, and though I do get more ‘me’ time, I never get the ‘go out and do anything I like’ time anymore. The breakfast is a killer. I just now gained 5 pounds.

    My mom used to wake up early for me and my brother to make a full breakfast, including eggs. I think I enjoy savory breakfast because of her full meal. Now that I’m mom, I rarely wake up early enough to make eggs… xD Feeling so bad that kids don’t to eat eggs until the weekend. I want to try this one. Looks pretty and fancy kinda egg dish! Plus, I never baked egg before!
