When I think about crepes I can smell strawberries, white sweet cheese and maple syrup. But apparently you can eat it sour as well…
I’ve decided to try this out and I must say an effect was delicious. Crepes with ham, pesto, egg and fried onion made my day. And you know what’s the best part? I had it for breakfast, so my whole day will be just the best.
What you need to make 4:
- 4 crepes
- ham or prosciutto or whatever you like
- basil pesto
- 4 eggs
- salt
- onion
- fresh parsley
First heat oven to 175°C. You can make crepes the night before and store it in your fridge, so it will speed up the whole process in the morning. Lay out the crêpes on the baking sheet on a cooking mat. In the middle of each crepe put some pesto, ham, spread fried onion and crack the egg. Spread salt and a half of parsley over it and fold up the four sides of each crepe around the egg.
Bake for 10-12 minutes until egg whites are set. Sprinkle with the rest of chopped parsley and it’s ready to eat.
