Greetings from Sopot! Somehow I ended up spending few days on Polish sea side. It’s like going back in time, as I used to spend a part of a holiday period over here when I was a child. That were always magical days, full of friends and games. We used to stay on a camping side and each year the same kids were coming over with their parents. We were getting wild on a beach, running and swimming and then playing some more in the evening. No tv, no computer, no obligations, just fun.
We kind of do the same thing with Mr T. when we travel, but this time it’s only me and the sweetest girl ever Julia. She’s a foodie as well and she has an unique point of view on this subject, but check it out by yourself. We eat a lot and concentrate on getting the best fish on the coast, but this is our kind of fun. I haven’t been in Sopot for ages so it’s a strange feeling to visit the same places and observe the changes. Time passes by and we hardly notice it…

But before I left I had breakfast with totally jealous of my coming adventure Mr T. (it was a positive jealousy as he knows that I’ll be having time of my life with Julia). To make him miss me even more I made him something delicious yet simple. Baked eggs – could it be any simpler? You can add whatever you like to it – feta, parmesan or chorizo. But I’ve decided to keep it simple. And it worked well for us.

You will need:

  • baked tomatoes
  • 2 eggs, separate yolks from whites
  • 1 tbsp sour cream
  • 1 tbsp butter
  • few beans
  • 2 champignons, cut
  • salt and pepper

Start to bake tomatoes in 180*C. On a pan fry champagnes cut in small pieces. Separate egg whites from yolks. Add 1 tablespoon of cream to whites and mix it. Take small baking dish and place one tablespoon of butter in it. Place it inside of an oven for a minute so the butter will melt. When ready pour whites into it, few beans, fried champignons and yolks on top. Season with salt and pepper and bake in 180*C for about 10-15 minutes.

Serve with tomatoes on side.

I am a Canadian married to a Polish-Canadian and I am forever searching the web for traditional Polish foods I can try at home. I love the simplicity, yet heartiness of Polish food. Your Polish background aside, I LOVE your blog because of its elegant simplicity while recognizing the most wonderful meal of the day – breakfast 🙂
