Baked Fruits with Yoghurt, Simple yet Not Ordinary

There is a huge difference in flavour of fruits when it’s fresh and baked.

There is a huge difference in flavour of fruits when it’s fresh and baked. It is a very obvious statement, but I have a tendency to forget things. Have you ever had baked fruit with yoghurt? If not, I am telling you, this is a game changer. Especially on a cold winter, dark morning.

On Saturday I am going to cross off one thing from my Bucket list, with the following days hopefully two more. I had a dream to go to Finland while it’s covered in snow and it’s happening! I take Mia and the main plan is to show her snow, as she did not experience much of it in her life. I am not sure if she played in the snow at all. Most probably not. So… start with Saturday, we’ll be doing a lot of snow activities, which includes angels, snowmen, snow fights and so on. I am also planning on seeing aurora lights (fingers crossed) and to go on a husky slide ride. I will also stalk the reindeers all over the Lapland, because this is what I do, I follow animals. I also try to make friends with them and to tell them how awesome they are, but in most cases they ignore me. This time I’ll have Mia with me and, well, she’s awesome, so we have a chance there. My level of excitement, so far, is around 1000 degrees and growing 😀 I seriously hope that Mother Nature will not make a joke and all the snow will be there…

The Recipe

YOU WILL NEED:

  • pineapple
  • pear
  • peach
  • brown sugar
  • juice and zest from 1 lime
  • cinnamon
  • pollen
  • yoghurt
Cut fruits in pieces, place on a baking tray, pour some lime juice over it, grate the zest, sprinkle sugar and bake in 200*C for about 10 minutes.

Let it cool down, then move to a bowl and serve with a natural yoghurt, cinnamon and pollen.

Enjoy, Marta

How are you able to find fresh peaches and pineapple at the same time of the year? They do sound good together and love the idea of baking them. Warm fruit and cold yogurt is a wonderful breakfast. Another good one!Hope your adventures in the snow pan out for you and Mia.

Hope you get to see the aurora lights — I never have, and would love to. And you gotta show us pictures of Mia in the snow! 🙂

You are so brave traveling with your little one, I have also discovered in my son the best traveling companion but, of course, he is already 20 years old.
Have a great time and we will enjoy after your trip through the blog <3

To be honest I kind of cannot wait for Mia to be 20 and to travel with me 🙂 It will be amazing to sit with her in a cafe in Paris and to have a glass of champagne or coffee. And not to stop in a half sip to chase her chasing pigeons 😀

PLEASE TAKE ME WITH YOU!!!! I dream of Finland, I dream of going to Levi – it shares its name with my son!! – to Rovaniemi, to Helsinki! I love Finland so much I had to include it in my novels. Of course there will be snow, and I will be sat here in not so warm and not so bright Portugal envying the heck out of you and Mia! Oh I do hope you spam my feed on instagram and I do hope the two of you have the best time ever!! Kiss a reindeer for me, I adore them!

Pieczone owoce z jogurtem, trudno sobie wymyślić lepszy poranek.
