It’s almost like eating a salat 😉
Sometimes parents need a break. Sometimes each human being needs a break. But as I am a parent, I am using the parent card. I love easy and fast breakfasts in general and this is what I usually post about with occasional more complicated one. Yesterday I woke up and I just wanted someone to make me a big juicy breakfast. I was so close to waking up Tomasz, but then I figured that doing so at 5 am on Sunday could finish our 11 year long marriage. A girl has to do what a girl has to do. So I started to imagine pumpkin pancakes. It’s all because I baked a whole pumpkin yesterday and we had some puree left in our fridge. To make the dough is easy, you just place all the ingredients in a bowl and mix. But then you need to fry them and stand next to a pan and flip. I just wanted to sit and do nothing, at least till Mia wakes up. I’ve decided to make baked pancakes. It could work or not, but if it does, I could use it in the future. It did work out! After 20 minutes of sitting next to an oven and reading a book, I had delicious pancakes. I cut out round shapes, but obviously ate everything else as well. It was early and it was Sunday, so I did not pay much attention, but after I had them, I figured, that I could cut out any shape I want like all the funny cookie shapes I have 😀 Next time then.
YOU WILL NEED (for 2):
- 1 cup flour
- 1 tsp baking powder
- 1 tbsp honey
- pinch of salt
- ½ cup pumpkin puree
- ¾ cup milk
- 2 eggs
- 2 tbsp olive oil
- ½ tsp pumpkin spices
Place all the ingredients in a bowl and mix. This is how I usually do it. I used to mix wet from dry separately, but now I do it all together.
Place baking paper in a baking form (I used 20x30cm, but a bit smaller or bigger will be ok as well). Bake in 220*C for 15-20 minutes (depends on your oven), until it gets nicely brownish. The dough will grow and it may look like a ball, but it will flatten, so don’t worry.
Enjoy, Marta
Thanks so much for this one! I love pumpkin and I try out everything I find on it. I fried them though 😉 and the kitchen smellt sooo well. One week later I wanted to repeat, but had no pumpkin, so I used some pre-cooked chick-pea (I’m a bit crazy about delivering good fibre to my kids 😉 ), but it wasn’t the same… Anyway, dzięki, pozdrawiam, Kasia

Pumpkin is so much better 😀
Such a lovely post, Marta! Thanks for sharing!

Thank you Tori 🙂
Well that’s ingenious! Love the idea of baked them because, you’re right – standing next to a grill pouring a flipping can be just a little too much work for a lazy morning. 🙂 I can see us having the round cutout for brunch, then nibbling on the small pieces for the rest of the day. 🙂 Beautiful autumn shots!

This is what I did 🙂 So much faster 🙂
Morning baking in silence while enjoying the scent and few sounds is a moment fully relaxing. Your pancakes look like a work of art. I’m impressed with the beautiful photos.

Thank you 🙂 I truly appreciate it.
What a perfect autumnal post! I miss you and Mia and hope that we can make pancakes together sometime soon! xx

It would be lovely <3 Miss you too Mina!
So good! I was wondering if there any chance to know something about your homeware? Where are these beautiful plates from? And I’m in love with your ceramic collection xx

Thank you! To be honest I bought this plate so many years ago that I don’t remember where.
ok, I’m actually sold on this. Per norm, I am not a fan of pancakes, but baked anything makes me a happy woman. I’m using the parent and human being card here, so someone must bake me these pretty soon ehehehehh

hahaha, I like to use this two cards a lot 😀 I’d bake you some <3
Just baked it with applesauce instead of pumpkin puree. Smells good and looks like it turned out fine! Just waiting for it to cool so we can taste…
