There’s nothing better than a delicious meal that looks impresive and is super easy to prepare. I love to share this kind of recipes and I love to find them as well. This one comes from Bill Granger’s book. Australians know how to cook, that’s for sure. Few years back, when I was living in Sydney I had a chance to visit his restaurant in Surry Hills. I had amazing pancakes with bananas and I had to come back few more times. When I was leaving Australia I bought a book with Bill’s recipes, so I won’t miss that place too much. This morning we woke up to a beautiful weather and it made me thinkl about Sydney, our friends and weekends on a beach. I miss it so much, even though I love crazy Berlin I’m living in. Or maybe time for changes come.
You will need (for 2):
- 375g ricotta
- 1 egg
- 2 tbsp brown sugar
- ½ tsp vanilla extract
For serving:
- figs or strawberries
- honey
Heat an oven to 180*C and grease small baking forms. In a medium bowl mix ricotta, egg, brown sugar and vanilla extract and, when all ingredients are well combined, divide it between 2 forms. Bake for about 20-25 minutes, until nicely golden. Take baked ricotta out of the oven, leave for 2 minutes and then ptransfer on a plate.
Serve with figs and honey or strawberries and honey or any other fruits you like. You can also add a piece of brioche.

i made this and it was good! i added lemon zest and coriander to the strawberries and honey (mixed well). made the ricotta exactly as written above. yummy!

Whenever I’m in Sydney I always try to head to Bills in Surry Hills – the experience never disappoints, although I haven’t been there for breakfast which is sad because that’s what Bills is best known for. His cookbooks are great, and you have done a fabulous job of that ricotta!

I feel the same way about England (my second home!) whilst still adoring Australia, where I’m living at the moment. It’s been ages since I’ve been to Sydney. I almost never use ricotta… it seems that it’s very versatile… I never would think to have made such a dish as this before but it looks like a lovely breakfast – strawberry, honey, figs… mmm, can it get any better?!

Oh my! this I have got to try! Just the pictures alone tell what a fabulous treat this is, but I was surprised when I saw the recipe. Baked ricotta! Sounds wonderful and quite easy to do. Great time of year to make this with all of the fresh fruit.

I love bills! I from austrlia sydney and I often go there for Sunday brunch. The laid back style of cooking attracts me, and this is perfect example. You are such a lovely photographer and this is such a lovely varition of it.
