Banana, Chocolate and Mint Rolls

I am a lucky person. I have Mr T., who is awesome and rocks my world, I have Ryszard the cat which is in need of love and fun 24/7 and I mean it, plus I have friends who invite me places from time to time. I was silent for a moment (I know, again), but I was lucky enough to spend some quality time on a polish seaside, in a countryside with some amazing people plus Mr T. I missed Ryszard like each minute, but (and it must stay between us as Ryszard can never hear about it!) we’ve met some crazy cats that went with us on a beach. To picture you what I‘ve experienced, I must ask you to imagine a beautiful house with a fireplace and comfortable armchairs around, located in a small village, 200 meters away from the sea. Plus a beach covered with snow and ice, where you walk through the forest. Can you picture that? If yes, welcome to my paradise. If you can’t, as you’ve never seen a beach during a winter time, I’ll post some pictures on my travel blog and you can check it later on.

When we came back home I was so tired, that I was sleeping for a whole day and night. The thing is that it was too good to waste your time to sleep in Pleśna. We’ve been walking around or organizing a sleigh ride during the day and talking during the night. I’m trying to be a good girl, but sometimes, when I’m very tired, I simply need a spoon of Nutella. This time I went a bit further and I love the final effect.

You will need (for 2):

  • 2 bananas
  • 2 egg roll wraps
  • handful of fresh mint, cut
  • oil for frying

For egg roll wraps:

  • 1 egg, beaten
  • ¾ cup cold water
  • ¼ tsp salt
  • 1 cup flour
  • 2 tbsp oil for frying.

You can buy a ready-made egg roll wraps or make it. It’s quite simple and I’ve found the recipe on Allrecipes. In a medium bowl mix eggs, water and salt, slowly add the flour and when all ingredients connect nicely, put it on side for about 15 minutes.

Heat a wok over a high heat, then remove from the heat and cover with 1 tbsp of oil. Reduce heat to low and you’re ready to fry your wraps. You will get 4 of them from this amount of dough, so pour ¼ of the mixture into the wok and create a round wrap, as wide as you can. Rotate wok quickly to spread an even layer of batter. After around 1 minute, the edges will begin to curl, this is a moment to put your wrap on a paper towel. After the second wrap add another tablespoon of the oil.

When your wraps cooled down, spread a thin layer of chocolate on it, sprinkle with fresh mint, place banana in a middle and roll it. Heat the wok again, pour some oil to cover the bottom and gently place your roll over there. Fry each side so it will become golden all over around. 

Serve with a castor sugar.

    Wow, I’ve never made egg roll wrappers before! They’re so easy to buy, that’s what I do. I should make my own. Particularly when I make this terrific dish – it looks tremendous. Such flavor! And it sounds like you had a wonderful time. But you know Ryszard is plotting revenge for being left out of all the fun!
