I got up at 7am today and I baked some blueberry scones. It was delicious, but while baking, it got too flat, just like cookies. It means I need to work a little bit on this recipe, but don’t worry, I had 5.
Then I felt like something simple and not too time consuming for a second breakfast and what can be easier than omelette. I made one with basil, cottage cheese and baked tomatoes. It’s simply too easy and too good not to try. Why do we forget easy recipes?
Not many of you know, but I’ve been traveling for a while. About 3 years ago I was in Rio de Janeiro and I met Stephanie over there. Yesterday she wrote me, that she’s in Berlin and we should have a coffee. We had it today and it was great to chat with her. How amazing is it? I love traveling and I must tell you, it’s a great feeling to reunite with friends you met on your way.
- 3 eggs
- 1 tbsp water
- salt and pepper
- few leaves of fresh basil
- cottage cheese
- few cherry tomatoes
- 1 tsp butter
- a couple of toasts
Bake tomatoes in your over (I left mine in 150*C for 15 minutes). In a bowl mix eggs, water, cut basil leaves , salt and pepper. Heat a pan and melt the butter. Pour the eggs mixture and fry until eggs are fried, but still soft on top. You can move still running eggs under the fried layer, it will help to make them faster (use spatula to do it). Place cottage cheese on it, fold in half and serve with baked tomatoes and toasts.

What fun to reunite with people you meet in your travels! I’ve been lucky like that a few times as well and it’s so much fun! Interesting omelet. I’ve used ricotta in this way, but never cottage cheese. Well, the husband loves cottage cheese so I might just have to make him this. I’m sure we’ll both love it!

I love that you got up early to bake! I am not a breakfast eater and I get up far earlier than seven for work…but maybe on a saturday when I can sleep in I’ll have to try this out!
Sometimes the simplest of food is the best.
So so yum!! My favorite way to enjoy baked tomatoes. So comforting. I’m a little glad that the scones didn’t turn out. This is even more marvelous 🙂

Ooh, that’s fun to meet up with old friends!With your scones – did you use white flour? If you used Type 405 (the normal kind they have everywhere), stuff won’t come out correctly when using American recipes. You have to use a mix of Type 405 and Type 550. 🙂
