Bean, Lemon & Rosemary Hummus

I used to think that hummus is made out of a chickpeas. Well, now I know that not only. Today was also the first time I’ve ever tried a butter beans and I must tell it’s not the last one for sure. I like spreads and dips in general, i like to have them in my fridge, but I definitely love to have a homemade ones!

You will need:

  • 6 tbsp extra virgin olive oil
  • 4 shallots, finely chopped
  • 2 garlic cloves, crushed
  • 1 tsp chopped rosemary
  • grated rind and juice of ½ lemon
  • 2 – 400g cans butter beans
  • salt and pepper

Heat the oil in a frying pan, add the shallots, garlic, rosemary and lemon, and cook over a low heat for 10 minutes (stir from time to time). Leave to cool.

Transfer the mixture to a blender and add remaining ingredients. Process until smooth.

Tastes best with toasted ciabatta and a few drops of an olive oil on a top.
