Beetroot Crepes

Meet the beetroot crepes. You can have them sweet or savoury.

The last 9 months have passed so quickly that I haven’t really noticed when and how. I’ve had some amazing projects on a way, beautiful travels and I met wonderful people who’ve influenced my life in a great way. In March, while I was traveling by myself in New Zealand it turned out that me and Mr Greber will have a baby. Few days before I had a small accident and I lost my camera (not the best experience in my life but Mr T was very supportive over it) and I decided to use this event to tell Tomasz about this minor change in our lives. I sent him a private video on Instagram and wrote a message to check it out as it’s urgent. And he did and it was so much fun to learn his reaction as he sent me a short video as well 🙂 I went back to Sydney and promised my tiny 2 weeks old in my belly child that for 21st birthday she’s going to visit Sydney.

Few weeks later we flew to Japan for a month, where I was supposed to have the most awaited food experience in my life. Well… I didn’t. I could not eat raw fish and could not smell or even think of ramen or grilled/ fried Japanese delights. For the whole month in Japan the only things I could eat were hamburgers, spaghetti, salads or bread rolls. Sounds like a good experience for a person who likes to experiment with food, doesn’t it. But again, I made a deal with Mr T that I’ll come back to Japan just to eat and this time I used my time not to experience with food but to travel around this beautiful country.

After this two months I ended up with two scars on my knee. One happened in New Zealand when I got so excited after climbing volcano that I accidentally kicked a tree and the second one I just fall down while hiking in Japan and lost my only long trousers and a big part of skin. I’ll tell Mia both stories as she was a part of them.

When I came back to Berlin it was only better. I am convinced that my baby girl brings me luck. I had so much work and projects that my plan to enjoy last two months of my third trimester just didn’t happen. I mean I did enjoy it but I kept on working. And this is how we come to the last days. I was supposed to meet Mia 6 days ago. But as it happens in life I’m still a package of two and I totally don’t mind 🙂 To be honest I still don’t feel like a pregnant lady as my belly is small and doesn’t bother me at all.

I have a new small project – I’m trying to collect few easy recipes that Tomasz can use when Mia is around. Don’t understand me wrong – this guy knows how to cook, his risotto should be served in the best restaurants and when we have nothing at home he still creates something exceptional. It’s more about not having that much time in the morning. I do hope that our routine will go back to the norm after a couple of months but if not. I want to be prepared.

So… meet the beetroot crepes. You can have them sweet or savoury. And this colour will make your morning table more positive. I served mine with a cottage cheese, rucola, plums and blood orange jam. You can consider replacing plums and jam with asparagus or fried mushrooms. It will go nicely with pesto as well. So many options to try 🙂

You will need for crepes:

  • 1 cup flour
  • 1 egg
  • pinch of salt
  • 2 cups almond milk
  • 1 beetroot, cooked and grated
  • 1 tsp coconut oil

For serving:

  • cottage cheese
  • rucola
  • plums
  • blood orange jam

You know how to make crepes 🙂 Mix all ingredients in a bowl and fry over a medium heat on a pan with a bit of a coconut oil.

I served my delicious pink crepes with a cottage cheese, recola, plums and blood orange jam. It was an amazing mix. You can serve it less sweet as well.

    Sometimes you come across a recipe that just makes you stop dead in your tracks. This looks beautiful and oh gosh you must be so excited! I remember the feeling well, being 7 days past due and just knowing any moment now you will meet your sweet little baby.

    Congratulations on expectant baby girl! How exciting for you! Obviously it wasn’t too exciting for you in Japan, but I’m sure you’ll be back. These crepes are amazing! I can see them being sweet or savory. That bt with the cottage cheese and fruit looks almost too healthy, but so good! Maybe a drizzle of chocolate? 🙂
