Beetroot Waffles with Beetroot Hummus

The cool thing about this waffle – it’s not dry.

I love waffles. Of course I’ll start with “When I was a kid” story. So, when I was a kid we used to spend a family holiday on a polish seaside and there were waffles. I could literally eat them for a breakfast, lunch, snack, dinner and dessert. They were big, fluffy with crispy skin. Wow! I liked it sweet most, these days powdered sugar was my best friend. Do you know what has changed since I was a child? Pretty much nothing. Yep, I still love waffles. My best investment of 2015th was to buy a perfect, professional waffle machine. Some of you most probably realised that I have made a lot of waffles lately. I had them for breakfast pretty much each other day. I have few awesome recipes, just check my archive.

Today we’ll be having a beetroot waffle which is accompanied by beetroot hummus. It’s still kind of sweet, but also healthy! I’m so going to make colourful waffles for Mia one day. For now I have to eat them, well, life may be difficult sometimes…

The cool thing about this waffle – it’s not dry. I made a breakfast party with friends and I made these babies. I was afraid that it may be too dry, so I prepared extras like fruits, cheese cream, maple syrup. But it wasn’t! I made it a few times already and for sure this beetroot hummus is enough . Ok, I like to add avocado to everything, so I did. But avocado goes well with almost everything, doesn’t it.

You will need for waffles:

  • 1 & ½ cup white flour
  • 2 tsp baking powder
  • 1 tbsp brown sugar
  • pinch of salt
  • 2 eggs
  • 1 & 1/3 cup soy milk
  • ½ cup oil
  • 1 beetroot, baked and grated or blended

For beetroot hummus:

  • 1 can chickpea
  • juice from ½ lemon
  • 1 garlic
  • 2 tbsp olive oil
  • 4 beetroots, baked

There’s nothing complicated in making waffles. Place all the ingredients for the dough and mix well. Then use your waffle machine as usual.

The same goes for hummus – just blend it baby!

You can serve it with avocado or arugula.
