I miss summer from time to time and it’s fresh and juicy fruits and vegetables. Don’t get me wrong, it’s great to ice skate through a frozen canal, but walking without five layers on me sounds good as well. 

As a remaining of a summer I made a berry oatmeal. I used a frozen berries, not the fresh ones, but it was still delicious.

You will need (for 2):

  • 2 cups frozen berries (blueberries, strawberries & raspberries)
  • 1 tbsp granulated sugar
  • juice of ½ lemon
  • pat of butter
  • 1 cup old fashioned oats
  • ¾ cup milk
  • pinch of salt
  • 1 cup water
  • 1 teaspoon flax seeds

In a bowl mix together berries, lemon juice, sugar and set aside. The second step will be to prepare oatmeal. To do so boil water, milk and salt, stir in oats and cook about 5 minutes over medium heat stirring occasionally. Melt butter in a big frying pan (over medium heat) and saute fruit mix until soft. Add cooked oatmeal, sprinkle with flax seeds and stir well.
