Bircher Muesli with Pistachios and Mandarin

I like to eat a bowl of porridge in the morning and it’s quite inconvenient since I have a blog with breakfast. I’m trying to diversify my morning meals, but from time to time I go back to this favorite flavors. Therefore, I propose today a truly healthy and quite unusual flavors for breakfast.

You will need:

For the bircher muesli

  • 1½ cups traditional rolled oats
  • ¼ cup quinoa flakes
  • ¼ cup trans coconut
  • ¼ cup raisins
  • 2 cups apple juice

Banana Almond Cream

  • ¼ cup almonds
  • 1 banana
  • 2 dates

For serving

  • 2 tbs pistachio nuts
  • 1 mandarin

Start with preparation of the the bircher muesli, because it should be refrigerated overnight. To do so combine all the ingredients. It also good to soak the almonds overnight, so put them into a bowl, cover with water and store in the fridge as well.

In the morning prepare the banana almond cream, so combine the drained almonds with banana and dates (remove the seed) in a food processor. Process in blender until smooth.

Serve with the pistachio nuts and mandarin.
