Greetings from Zakopane! It’s simply amazing over here and I can see that spring took over the place. It’s very warm, everything around is growing, birds are singing, stream swims somewhere fast and everything makes me happy. I’ve already eaten about 1 kg of Oscypki, and will upload a recipe soon, but for now a recipe for biscuits with parmesan cheese that I baked for Tomasz before I left. I hope he misses me a lot 😉
You will need:
- 3 cups flour
- 1 tbsp baking powder
- 2 tbsp parmesan cheese
- ½ tsp salt
- 1 tsp sugar
- 170g unsalted butter, cold
- 1 & ¼ cups milk, cold
- pepper, ground
Preheat the oven to 220*C.
In a bowl combine the flour, baking powder, cheese, salt, and sugar. Cut the cold butter with a knife into small pieces, or place it in a freezer for about 5 minutes and grate it . Add it to the bowl and pour the milk. Put the milk cup on a side, as you’ll use the few drops on the bottom to brush the tops of the biscuits
Stir all ingredients gently until all the flour is moistened. Flour a table top and transport your dough on it. Knead the dough briefly by folding it over itself and pressing down gently, until the dough comes together as a coherent mass. If the dough is too wet add some flour, but be careful, you don’t want to add to much.
Roll the dough to square with a thickness of about 2 cm and using a knife cut it into small square biscuits (around 4 cm). Place them on a baking tray covered with a baking paper (if the biscuits separately it will be crisp all over, if you place it quite close one to another, it will have a soft sides). Brush the tops of the biscuits with the remaining milk, sprinkle with the pepper and bake for about 12-15 minutes, until nicely golden.

I’ve been to Zakopane! It’s been a couple of years but we were in Poland for a wedding and had the chance to drive around a bit and also visited Zakopane, which I totally loved. Such a beautiful place! Enjoy!

I love this for breakfast. In Mexico we have something similar that we call bisquets, no cheese, though, and we use them for open face breakfast sandwiches. That first picture is making me hungry!
