Blinis with Salmon and Spinach for a Big Breakfast

Delicious blinis and my goodbyes to 2016th

Today is a packing day. I am definitely not a master in this discipline, as I always think that I have loads of time to do everything. This is what happened with Australia earlier this year, when I was convinced that I still have time to apply for a visa, did it last minute and was freaking out that I’m not going anywhere. This time I started one day earlier to discover, that I don’t have summer clothes for Mia. Or I do, but way too small. I made a run around my neighbourhood to discover that summer clothes are not around, nor are sandals. The cool part is that my language will be light, the not so good one- it will be a “tight faze ” for Mia.

It’s also time to say bye bye to 2016th. 2016th thank you, you were good to me, I must say you were one of the best years in my life. Obviously you sucked a few times, you made a torpedo out of my kid, gave her a power of speech and ruined my quiet time. You also decided that you’ll teach me a lesson and I did learn all of it. Just wait for 2017th to come with complaints.

2017th will be all about being happy.

The Recipe

YOU WILL NEED FOR BLINIS:

  • 1 & ¼ cup wheat flour
  • 1 tbsp baking powder
  • 2 & 1/3 cup (290ml) milk
  • pinch of salt and black pepper
  • 1 tsp mustard
  • 4 egg whites, whisked

YOU WILL NEED FOR SERVING:

  • couscous
  • lemon juice
  • lemon zest
  • raisins
  • olive oil
  • salmon
  • baby spinach
  • roasted pistachios
  • a bit of a sour cream
  • salmon
Start with whisking whites. Then mix all the other ingredients in a separate bowl and slowly mix in egg whites. The dough will be nicely fluffy. Heat a frying pan over a medium heat, melt a spoon of butter and start frying.

Blinis are amazing just like it. I served mine just like I had it in one of Barcelona’s cafes, try it, it’s delicious.

I simply mix spinach leaves with couscous, a splash of a lemon juice and olive oil, then raisins, roasted pistachios and lemon zest. It’s delicious! Place a slice of a salmon on a side. And then mix everything!

    These blini look amazing. I am Russian so these are a staple in my diet 🙂 We usually eat them sweet, topped with sour cream and preserves.

    Happy New Year. I packed for a holiday and have come away with not nearly enough clothes and nothing warm for when the weather turns. I can’t imagine where my head was at when I did the packing. Beautiful looking blinis xx

    Well, it’s packing day here as well and I’m sitting at my desk wondering if I should make blinis for NYE!!! I was talking about blinis to my son just recently, go figure, so I guess I will have to make them soon! Have a happy New Year, and that 2017 is even better on you than 2016 seems to have been!!
