It was delicious, it had to be, because I ate all 10. But I keep thinking that it is made out of oats, so it’s not a big deal 🙂 Now I’m a bit afraid that I won’t be able to share it with T. the next time. If you’re not sure what an oat flour is, don’t worry, you can do it yourself. Simply put an of old-fashioned oats into a food processor and process until it is ground well.
You will need (for 2 people):
- 1 & ¼ cup plain yogurt
- 2 tbsp butter, melted
- ½ tsp lemon zest
- 1 tbsp lemon juice
- 1 tsp maple syrup (or honey)
- 2 eggs
- 1 cup oat flour
- ½ tsp baking soda
- ½ tsp salt
- 1/8 tsp ground cinnamon
- 1 cup blueberries
In a small bowl combine the yogurt, butter, lemon zest, lemon juice and maple syrup. Add beaten eggs. In another bowl mix together the oat flour, baking soda, salt and cinnamon. Combine all ingredients with a big spoon, stir just until the dry ingredients are thoroughly moistened (do not over mix). Add blueberries. Let the batter sit for 10 minutes.
Fry on a frying pan on 1 or 2 tablespoons of an oil over a medium heat. Let the pancake fry for about 3 to 4 minutes, until bubbles begin to form around the edges of the cake, then flip it on the other side for another minute or two (until nicely golden).
Serve it hot with a maple syrup and extra berries on a side 🙂

SoOOoo…I just attempted to make these for breakfast and I can’t claim success :/ The pancakes were still too wet to flip after four minutes and were already quite brown on the bottom. Any chance I went wrong somewhere? (I did grind my own oats into oat flour…)

I did it like 20 times and it always worked. Pancakes will be wet when you flip it, that’s why you need to make small 🙂 Plus maybe your frying pan was too hot? Hope it will help.

Made them today, used toffee infused yogurt and substituted blueberries with dark chocolate chunks and goji berries – delicious! 🙂
