Two days ago I made delicious rolled french toasts and I ended up with bread crusts. I could give it to birds, but after a long speech a friend gave me about not doing it because birds will stop to migrate feeling too comfortable in a city, I’ve decided to use them. I also had an egg mix, so I cut a pinch of herbs from my windowsill and had all ingredients to make herbed bread crusts . It goes well with boiled eggs or fried eggs or any eggs really. 

You will need:

  • 1 egg
  • ¼ cup milk
  • ¼ cup thick yogurt (like Greek yogurt)
  • mix of fresh herbs (sage, thyme, basil, chives)
  • bread crumbs

In a bowl mix egg, milk and yogurt. Shred herbs and add it to the mix. 

Heat  an oven to 175*C. One after another place bread crusts in a bowl (just cover it with a  mix, you don’t want it to soak), place on a baking tray covered with a baking paper and bake for 15 minutes.

    THIS IS AWESOME. I hate hate hate wasting food, I’m nuts I even save veggie scraps in the freezer to throw into stocks, and save chicken skins for yakitori etc etc. I’ve never found a good use for bread crusts besides makign breadcrumbs out of them, but this is such a fun idea! good one, and gorgeous photos. lovely work all round xmummyicancook.com

    Hi Marta, I love the look of these… they’re like a fancy version of “soldiers”, toasted bread crusts which we ate as kids in England to dip into soft-boiled eggs. This makes a much more “adult” version :).
