Breakfast in a Comfy Bed with Baked Eggs – Sponsored

Breakfast in a comfy bed is a dream.

We started to have a small problem lately. To do all my morning magic I need to feel happily rested. I don’t need much, just a few hours of a good sleep. But it turned out that we did not establish it properly in our family and Mia got totally confused. By this I mean that her idea of sleeping is starting in her cradle and moving to parent’s bed at night. It is a sweet procedure, I cannot complain here. I love her sleepy face next to mine and the way she hugs me, to make sure that I won’t take her back to her bed. The rough part starts about 30 minutes later. This lady has some crazy dreams, in some of them she’s running, in other she must be a dancer, in the end she ends up on me or kicking me in a face is an every night procedure. Apparently Tomasz does not experience it as much as I do, but I personally had to say stop. Obviously we won’t kick her out of our bed because I like it too much. I’ve decided that what we need is a bigger mattress. Did you guys look for one recently? It’s literally like buying a car, so many options. Just when I was close to giving up and visualising my 8 year old daughter still kicking me in a face at night, I’ve been contacted by Eve to test their mattress and it was like a dream come true. No more searching, I’m keeping this baby forever!

I was waiting in excitement and one day my life has changed for the better (it does sound dramatic, doesn’t it). If you’re a parent and you let your kid join you at night, you know what I’m writing about. We spent few very comfortable nights, when the small feet had an extra space to act out and did not have to meet me as a barrier. We’ve decided to celebrate it with a good breakfast, obviously in bed. The recipe is simple, delicious, fast to prepare and you can experiment with it as much as you like. I use it to trick Mia into eating veggies, that’s why I added carrots. She loves eggs and she will accept whatever else goes with it. Baking takes 15-20 minutes, perfect time for a nice cup of coffee, before you wake up your family or you can catch up with a book or your favorite magazine.

The Recipe

You will need (for 1):

  • 1 handful spinach
  • 12 carrot, grated
  • few slices of ham or bacon
  • 1 &½ tbsp cheddar cheese, grated
  • 1 & ½ tbsp thick cream
  • 1 egg
  • salt and pepper
  • baked cherry tomatoes for serving
  • herbed toasts for serving
The recipe is super easy. Heat your oven to 175*C and place cherry tomatoes on a baking paper inside, so it starts to bake. Boils some water in a kettle. Fry spinach on a pan with a little bit of butter, so it gets soft. Take a little baking form or bowl you can bake in and divide spinach, carrot, ham, cheese cream between them. Separate egg yolk from white and mix white with 1,5 tbsp cream. Pour the mix into a baking form and place yolk on top. Sprinkle with salt and pepper.

Place baking form with all the ingredients into a bigger form and pour some hot boiled water into it. Place in your oven and bake for 15-20 minutes, so the egg white comes together.

Serve it with baked tomatoes on top and some herbed toasts. I make mine by melting some butter in a pan and adding chopped fresh herbs, then I fry my bread on it. Easy 🙂

    We finally broke down and got a new mattress this summer, and got one of those mail-order foam jobs (very similar to the one you got). They’re wonderful! And much less hassle than going to stores and looking for a mattress. Anyway, such a great dish. Hope you have a wonderful holiday season!

    A bigger mattress is the key to everything. The biggest one possible! I’m a super SUPER light sleeper, and getting a larger mattress changed my life. Though thankfully I wasn’t getting kicked in the face while I tried to sleep, hehehe. These photos are everything.

    I can feel you right there!!! My boy never really slept with us in bed – he’s eight now, and refuses to sleep in bed with me even when he’s sick! – but I used to get him there with us when he was a baby and was still breast feeding. THen, after he moved to his bedroom and his big boy bed, I always had him sleep in our bed with me when he was sick so I could keep checking his temperature and makig sure he was alright. Suffice to say, that even though we did kick Hugo out and off to the boy’s bed himself, I never got any sleep AT ALL!! That boy sleeps like he is doing gymnastics in the Olimpics, for sure! He would kick and punch and move the whole night away, and if I skidded away from him, he’d follow me and latch on to me, and pull his legs over my back or his arms on my face… oh the torture! But it always made me laugh inside, though, that’s just how stupid I am. I don’t think a huge matress would have solved the problem, actually, because the boy followed me around in bed so he could punch and kick in his sleep!!!

    A good mattress makes all the difference. I have a small Jack Russell and she likes to sleep right on top of me. That is too much heat in summer. Love your breakfast in bed 🙂
