Breakfast in Bed – Savoury Muffins with Salmon, Cream Cheese and Pesto

I’m trying to spoil myself as much as possible. For now it’s me that should be the most important person in the world as I carry an extra person on board. Within a month (theoretically) there will be three of us and apparently I’ll get crazy/wild and this little creature will be the most important one. Life. So for now I spoil myself and I make others do the same thing, obviously for me.

You will need (for 6-8 muffins):

  • 2/3 cup all purpose flour
  • ½ cup cornmeal
  • ½ tsp baking soda
  • ½ cup grated cheese (like cheddar)
  • salt and pepper
  • 2 tbsp olive oil
  • 2/3 cup buttermilk
  • 1 tsp pesto
  • 1 egg
  • 1 cherry tomato in each muffin

For serving:

  • salmon
  • cream cheese
  • pesto
  • sprouts

Preheat an oven to 180°C (355°F). Place all the ingredients except for tomatoes in a bowl and using a spoon mix just a little bit, so all the ingredients combine. Grease a muffin form (for 6 or 8 muffins) and pour dough into it. Place a whole cherry tomato in each one.

Bake for about 20-25 minutes.

When ready let it cool. Serve with a slice of salmon, cream cheese, teaspoon of pas to and sprouts.

    These muffins are great! I bake a double batch every week and my partner and I take 1-2 of them to work every day as a snack! I have made some variations which have worked really well for me: I use grated fetta instead of cheddar and I also add small halloumi chunks (which, if you didn’t know, is the only cheese that doesn’t melt, so you can actually feel the little chunks!), as well as chopped sun dried tomatoes. I also use the herbed oil from the sun dried tomatoes’ container instead of simple olive oil. Super delicious! Thank you Marta! 🙂

    love it! I’ve been looking for more savory things to eat in the mornings… Today was an exception – one gigantic pancake with real maple syrup. I enjoyed it and all. Some days greek yogurt and honey and fruit… but I really love starting the day with something savory. Trying to get myself to eat less sweet!Valentina

    Did you bake the cream cheese and tomatoes INSIDE the muffins? The photos of the split muffin looks like the cream cheese, sprouts and bits of tomatoes are actually in the batter. I love this recipe, can’t wait to try this weekend. Thank you.

      I baked tomatoes inside. The cheese I put on top but quite a lot (I really like it) so when I cut it in half it followed the knife and looks like it is inside. Plus I cut the top of muffin under an angle 🙂 I am glad you like it, it was delicious 🙂 Especially as a lazy morning treat.
