Breakfast in Bed – Sweet Quinoa Treat – Sponsored

I love to have a breakfast in bed. Even more since I am a mom and it’s hardly ever possible. Why? Because it means that the food will be stolen by Mia in the brighter scenario or smashed over my bedding in a bit worse one. But at this random day when I can (for example, when Tomasz and Mia visit my in-laws), I take advantage of this lazy and comfy option. And at this precious moment I don’t miss Mia. I enjoy my alone-time. Just me and a jar of extremely delicious fruit quinoa with mango puree , roasted pine nuts and figs. Awesome combination of flavours. You just need a comfortable bedding , a book, a cat, nice music and nothing to do. Enjoy your morning!

Oh and the good part is, that you can store it in a fridge overnight and just grab in the morning.

Bedding by Evencki

You will need :

  • ½ cup quinoa
  • 200g strawberries
  • 1 tbsp agave syrup
  • 1 mango
  • juice out of ½ lemon
  • yoghurt (soya or greek)
  • fruits like figs
  • agave sirup
  • pine nuts

Cook quinoa as you usually do. Cool it down and mix in blended strawberries and agave syrup. Divide it between two bowls. Place two spoons of yogurt on each and top with blended mango mixed with a lemon juice. Cover with roasted pine nuts and fruits.

    Hmm I love the combination of fruits in this treat – mango, figs, quinoa… great choice! Breakfast in bed with kids is disaster, and I can totally imagine you’re enjoying alone-time on bed with this! Haha! It must be a lovely morning shooting and enjoying breakfast in bed. 🙂

    I love having breakfast in bed, but with me, it’s always really the very simple things: bread with my favourites on top, some cucumber in the side, a tea, and a book! that’s the best weekend mornigns 🙂 but maybe some day i try having this figgy breakfast instead!

    I don’t think I’ve ever eaten breakfast in bed! When I was young I used sit about an inch from the TV on weekends watching cartoons and eating sugary cereal.Then when I got older, it just wasn’t something I ever did. This looks amazing and my love of figs has really grown in recent years, I really never used to like them.Such beautiful pictures, enjoy your rare moments of calm!

      Kitty kept trying to take over my food or flowers. Even thought Mia and Tomasz were away, I had to protect my food hahaha.
