We had a longer night with friends yesterday and today my New Year’s resolution to get up early in the morning didn’t work out. As I have to catch up with everything I need to do, I made an refreshing breakfast, that will load me with all the energy I need.
You will need (for 2):
- ½ cup quinoa
- 1 cup of milk or soy milk
- 1 tbsp maple syrup
- pinch of ground cinnamon
- ½ cup fresh raspberries
- sliced banana
Cook quinoa (if you’re not sure how to do it, follow these directions). When it’s ready, pour in the milk (it can be boiled or cold), stir in the maple syrup and cinnamon. Serve topped with berries and banana slices.
