Hallo Berlin! We’re back! On Friday I’ve experienced the first snow in this winter and I felt like a 5 year old child. I wanted to make angels and a snowmen. Berlin is amazing, but I also enjoy being back in my apartment, especially in my kitchen. Is it strange that I missed my table, plates and mornings in the kitchen? I truly did.
To say a proper “hallo”, I made delicious and healthy muffins. The beauty of this recipe is, that you’re making only 4, so you’re not tempted to eat 10 at once (believe me, you will want it). I found an original recipe on Whole Living site and I had to add avocado.
You will need (for 4-6):
- ¼ cup buckwheat flour
- 1 tsp baking powder
- ¼ tsp ground cinnamon
- ¼ tsp nutmeg
- pinch of salt
- 2 eggs
- ½ mashed banana
- ¼ mashed avocado
- ¼ cup honey
- ½ apple, diced
- ¼ cup walnuts, chopped
Heat an oven to 175*C (350*F). In a bowl mix everything except from apple and walnuts. When everything is mixed, add apples and walnuts. Place papers in a muffin form (4-6 depends on a size of a form) and fill them with a batter. Bake for about 30 minutes, make a toothpick taste after this time and if not baked well, bake some more.

Ooh I did the Whole Living cleanse last year! I remember these–they were so good! Adding avocado sounds amazinggg and your photos are GORGEOUS! Every photo just keeps topping the last one 🙂

I love your kitchen table! Good to see it in pictures again. We’ve had more than enough snow so far this year, so I’m not eager to see any more of the white stuff! But if I had a muffin like this to eat after shoveling snow, it’s be OK. 😉
Muffins are absolutely my favorite thing for breakfast, and these ones are so special. I love the addition of avocado!! I’ve made muffins with avocado before, but they never really result the way I want. I think it must be the flavor of banana that I missed. Can’t wait to try these, thanks so much for sharing! I’d love to taste buckwheat muffins! I grew up eating buckwheat in soba form, but nothing else. Apple, banana, and avocado + buckwheat? I’m very intrigued! 🙂 It’s nice to be home – I love that feeling of relief and comfort of having familiar things around especially after a long trip. 🙂
