Caramels with Rose Petals

Caramels are yummy, easy, you can make it for everyone and eat half while making.

If you’re scared of a vision of searching for all the presents you still need to get, make caramels! They are yummy, easy, you can make it for everyone and eat half while making. Everyone is happy and you will consume some sugar, so you’ll be happy as well 😀 Is there more convincing needed? If yes, you can put whatever you think that other people like on it like chocolate or nuts or rose petals. There’s sooooo many options!

The Recipe

YOU WILL NEED:

  • 2 cups sugar
  • ¾ cup honey
  • 180g butter
  • 2 cups creme fraiche
Prepare a baking form, I used 16×24 cm and it was perfect. Spread some olive oil on it and cover with a paper.

In a pot, place sugar, honey, butter and half of cream and bring to boil over a medium heat, mixing constantly.

When it comes to a boil, start to very slowly add the rest of cream. It would be best if the cream was in a room temperature. Mix constantly.

There is a lot of mixing included, but it’s worth it :). The mixture starts to get darker and it’s all good. It should come up to 240*C, but if you don’t have a thermometer, just observe it. You will see with time that it becomes thick.

When ready, pour into a prepared form and let it cool down. Move it to a fridge and keep it there, so it comes together nicely and will be easy to fit. I got distracted and did not leave it in a fridge, ups. It was still easy to cut, but a bit chewy, as you can see in a movie.

Before cutting spread whatever you like over the caramel. It may be rose pastels, salt, chocolate, nuts and so much more.

Cut shapes you like and roll in the papers! Try not to eat half of them straight away.

    ok so I’m one of those really nasty people who does not like caramel – frankly, aside from chocolates you can gimme samoosas and I’ll be happier than if you get me sweets. Cheese, also, I would rather have cheese than caramels how funky is that? – but I have to admit, these look beyond gorgeous!!!
