December is definitely one of my most favourite months in a year, as there’s so many reasons to meet with friends and to celebrate. Each year I am waiting for the Christmas period and for “Śledzik”, which is a polish style meeting with all your friends just before you drive away to spend time with parents and siblings. There’s always a lot of delicious food, each person brings something special, but not too complicated. The idea is to spend time together and to celebrate Christmas, end of the year and friendship.

There’s something special in long, slim glass filled with bubbles. Maybe it’s me loving old American movies, but I always felt that Champagne makes each occasion even more special. YOU WILL NEED FOR APPLES IN CARAMEL:
- 2 cups sugar
- ¾ cup honey
- 180g butter
- 2 cups creme fraiche
- 6-8 apples
- nuts, chocolate, cut in small pieces
YOU WILL NEED FOR THE CHRISTMAS TREE:
- 250 g flour plus extra for dusting
- 1 tsp dried yeast
- 1 tsp sea salt
- pinch of caster sugar
- 150 ml (a bit more than a half of cup) of warm water
- 1 tbsp olive oil
- melted chocolate
- peanut butter
Leave apples in a fridge so it’s cold. Prepare longer stick (like ice cream sticks), which you can put inside the apples.
In a pot, place sugar, honey, butter and half of cream and bring to boil over a medium heat, mixing constantly.
When it comes to a boil, start to very slowly add the rest of cream. It would be best if the cream was in a room temperature. Mix constantly.
There is a lot of mixing included, but it’s worth it :). The mixture starts to get darker and it’s all good. It should come up to 240*C, but if you don’t have a thermometer, just observe it. You will see with time that it becomes thick.
When ready, let it cool down, so it’s almost a room temperature but still liquid. Place each apple in a caramel and let it cover well with it. Then roll each apple in a chocolate or nuts or whatever cover you choose.
Christmas Tree:
Leave apples in a fridge so it’s cold. Prepare longer stick (like ice cream sticks), which you can put inside the apples.
We will start with making the pizza dough. Sift the flour into the bowl and add yeast, salt and sugar. Pour the water and oil in the middle and mix everything to form a soft dough, move it on a floured surface and knead for about 10 minutes until it’s smooth and elastic. Transport it to the oiled bowl, cover and leave to rise in a worm place until it doubled in size (about 1h).
Heat oven to 220C. Divide the dough in half and roll each of them out to a rectangle. Take on, cut it in half, place both parts one on another and cut out the tree. Spread chocolate and peanut butter on one part and cover with the other. Cur each side of a tree in stripes and roll them (you can see how it looks on a picture). Repeat with the other rectangle.
Transfer to a heated baking sheet. Bake for 10-15 minutes.
