Cheese and Herb Cornbread with Scrambled Eggs

I made it yesterday at night. We came back home wet and tired and I knew that I won’t have time in the morning. I got up and made scrambled eggs. It goes well together. I like easy mornings.

You will need: 

  • 150g flour
  • 110g polenta
  • 60g cheddar cheese, grated
  • handful herbs (sage, basil, thyme), chopped
  • 2 eggs
  • 250 ml buttermilk
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 4 tbsp olive oil

Mix all the ingredients in a bowl. Grease a baking form (I used 20cm x 10cm) and place your mix in it. Bake in 180*C (350*F) for about 45 minutes.

Serve with your choice of eggs on top. I made scrambled eggs and it was a good choice 🙂
