Cheese, Tomato and Basil Muffins

Claire is still with us. Small Kiwi backpacker who makes my days and helps me with waking up at 7 am to make some muffins. Tomasz is happy, Claire-Bear is happy and I’m happy, because I have time for my morning coffee and internet addiction.

You will need:

  • 150 g self-raising flour
  • pinch of salt
  • 100 g yellow cornmeal
  • 65 g cheddar cheese, grated
  • 50 g sun-dried tomatoes in oil, chopped
  • 2 tablespoons chopped basil
  • 1 egg, lightly beaten
  • 300 ml milk
  • 2 tbsp extra virgin olive oil
  • butter to serve

Heat an oven to 180 C and oil 8 muffin tin holes. In a bowl combine flour, salt, cornmeal, 50 g of cheese, the tomatoes and basil. In a separate bowl beat egg, milk and oil. Mix dry and wet ingredients, divide the batter between the muffin holes and scatter over the remaining cheese. Bake for 20-25 minutes. Serve with the butter.
