If you ask what I eat when the morning comes and my teething baby wakes me up at 7 am, full of energy and happy that the day is here, this is it.
Moms eat breakfast as well, you know. Not as often as others and not in one go, but they do. Sometimes coffee is a long cold (I hate it!), sometimes scrambled eggs are not edible anymore (yep, it happens) and sometimes it’s just too much of an effort and we keep repeating to ourself that we can live on love to our kid, because making a sandwich is way too complicated. That’s why I dedicate this one to moms. You can make it in the evening when your precious little thing is sleeping and you feel like you have your life back in your hands for one hour. I think that everyone knows this recipe by now, but it’s worth repeating.
So if you ask what I eat when the morning comes and my teething baby wakes me up at 7 am, full of energy and happy that the day is here, this is it. I just open my fridge, grab it and eat it. Btw. I have no idea how it is even possible that these little creatures have so much energy when they didn’t sleep during the night. It’s not logical. The only thing I want to do is to drink coffee and playing all the fun games, I’m waiting (sometimes nervously) for the first nap of the day.
It is crazy how much I miss sleep, and I think that if you don’t have someone waking you up a lot during a night, you won’t understand it. I used to think that I get it, when I was working long hours and catching 6 hours sleep before waking up and working some more. But it’s nothing! At least I had 6 straight hours of sleep. Nowadays it’s living a dream. Literally, hahahha.
I posted many fast breakfast recipes, but this one I like a lot. Why? Because it reminds me of summer and strawberry period. I froze so many for a black hour and lately this black hour is like each second morning. I’ll run out of all my supplies soon, but for now I enjoy it. Because eating breakfast is cool, so cool!
This recipe was totally inspired by one of The Green Kitchen Stories breakfasts, who are a true inspiration, they have two lovely kids and still manage to rock their meals. Respect.
You will need (for 2 cups):
- 300 g frozen strawberries, or any other fruits you like
- 6 tbsp chia seeds
- 2 tbsp coconut flakes
- 1 tbsp agave syrup
- 1 cup soy milk
For banana cream:
- 2 bananas
- juife from ½ orange
For serving:
- fruits you like
- nuts
- pollen
It’s all so easy. start preparations in the evening, so you can enjoy your ready breakfast in the morning. Defrost strawberries and blend it. Add chia seeds, coconut flakes, agave syrup, milk and mix. Place in a fridge overnight. Blend bananas with juice from ½ orange and place in a bowl, cover and leave in a fridge overnight as well. In the morning divide content of both bowls between two persons and serve with fruits, nuts and a bit of pollen.

Yes, I do indeed remember those days of no sleep, wondering whether I would ever sleep again. Let me encourage you by saying it does get better- there is hope at the end of the tunnel! I am truly amazed how you make make a simple breakfast such as this look like the most amazing little jar of goodness. So lovely!

After having 3 kids, I can totally understand, relate and feel you my dear :). But do not worry , this is going to end soon and you’ll be back to your normal life- unless you decided to have another one soon :)). Loved your recipe so healthy and your photos are amazing.
