Chickpea, Yogurt and Egg as One Delicious Breakfast

Time passes by, I keep forgetting about it, but it doesn’t make it stop. In 2006 I married Mr T – it was a good year that has totally changed my life. In 2007 I left Poland. Since then we were living in 7 different countries and visited many more. For the past few weeks we’re living in a small 6th floor apartment with no lift in Barcelona. This is also a place where Ryszard met his new life partner Lola (but not a love of his life as I’ll always be the one). We enjoy a beautiful warm weather and the city. But during the weekend we rent a car and made a three day road trip. It helped me remember how much I love my life. Of course I miss my wooden table, kitchen, cups and blender in Berlin. I also miss my race bike and what I’d love to call “my city” – I am not sure if I am allowed to call it so after only 1,5 years in Berlin. But I also love changes, living in different countries, new experiences, people that we meet on our path and the way that all of this helped me to enjoy a good cup of coffee. I love to be on the road, to see sunset, to wake up early to welcome sun rise and to do it with Mr T.

We came back home and discovered that Lola doesn’t like her food, as her two bowls were full and Ryszard’s totally empty. The next day we got up, had a nice breakfast on our terrace, enjoyed a morning coffee and came back to our reality. And for now I love each bit of it.

You will need:

  • ½ cup chickpea
  • ½ cup thick yogurt (like greek one)
  • zest of ½ lemon
  • 1/8 tsp cayenne pepper (or a big pinch)
  • salt and pepper for taste
  • few fresh basil leaves, chopped
  • poached egg

This recipe is super easy. The only thing that will take time is preparing a poached egg. You can check over here how to make it easier.

Place chickpea in a bowl or a glass, cover with a mix of yogurt, lemon zest, cayenne pepper and basil, then put a poached egg on top and season with salt and pepper for taste. Remember to go dip with a spoon, so you will get each ingredient on a spoon 🙂

    7 countries! I used to dream about living in different countries and traveling, but now it’s a bit harder to do so with the two kids. They are getting bigger so some things are much easier though. I can’t wait to visit Europe and walk around. You’re so lucky to be able to see different places! 🙂 Love this healthy breakfast!
