I had to make my taxes in 3 countries this year, don’t ask me why/how/WTF, I can’t even say a word “taxes” anymore. I just hope that it’s all good. This forbidden word equals stress in my case. When I stress out, I eat sweets, but not any sweets, I eat super extra good sweets. Today I spent 2 hours with my advisor. Do you know what I did to prepare my mentally for that? I had an awesome sweet breakfast. I found a recipe on How sweet eats (cute name for a blog, isn’t it?), modified it a little bit and then I kept smiling for this 2 hours. Food helps in life, but strawberries with a mint chocolate and cheese on a toast make you crazy happy. Try it when you’re feeling blue and you’ll understand me.
You will need:
- 1 or 2 slices of bread
- handful strawberries
- brie or camembert cheese
- after eight chocolates
- fresh mint
- butter
- olive oil
Preheat an oven to 170*C, cut strawberries and place it on a baking paper, toss it with olive oil and roast for about 15-20 minutes. Meanwhile butter your bread and fry on a medium heat until golden brown. When your toasts are ready place few mint leaves on it, slices of cheese, pieces of chocolates and cover it with hot strawberries. You can make another layer in the same way if you like. The chocolate and cheese will melt and everything together tastes like heaven.

I can’t agree with this one,. Maybe you roasted it for too long? It should taste like fried strawberries, so similar to jam.

That reminds me though… that time of year is upon us, and I’m just waiting for my declaration of earnings from my company so I can file my own tax return… sigh. Still… had a baby last year so maybe that means I’ll get a rebate!This sandwich is well deserved I say after such taxing trauma (pun fully intended). Looks lovely Marta!
