Good breakfast will make your day way better. But there are also a few more things that may work.
When you have a difficult day or it’s Monday, you should have a big, juicy totally guilt full breakfast. I did it and I feel good about it. I was supposed to go for a run, but I quit the idea as I didn’t want to spoil the feeling.
This week will be a busy one and I hope that everything will go as planned. I am well motivated for sure. Last weekend I had a pleasure to meet the one and only Massimo Bottura and listen to what he has to say. It always surprises me how easy it is to give me a good kick or energy and motivation. I’ve been pretty tensed lately, as I had loads of work and not much time on my hands (week of only me and Mia in the house). I did learn how to work fast, but I needed a bit of a help to relax. First, I went for an acupuncture as my pregnant at the time girlfriend told me it relaxes her like nothing else. It did work, OMG I could feel a perfect balance in my body. I wanted it to stay forever, but of course the next day it was gone. The doctor who did this magical needle thing to me, told me that acupuncture is only a short time solution, for the long term one I need to practice meditation. I like to listen to smart people and I definitely want to have this magical balance inside, so I’ve started. It’s not easy at all, but I found this amazing website with guided meditations and it works for me for now. It’s good to start.

The thing is that I’ve noticed that me being tensed or me being angry at others or on situations has a very big impact on me as a mom. I don’t want Mia to observe me acting like a crazy person. I want her to sense a calmness, love and understanding from her mama. Life is a difficult and tricky game as it is, she does not need me to add any more. Sometimes I think so much about what may or could have happened, that I forget to concentrate on now. But I’m definitely working on it.
There’s one more thing. It’s good to let go and to get rid of all the negative feelings. But sometimes we worry, at least I used to worry a lot (especially since I’ve become a mother). If there’s anyone else who has an annoying tendency to worry a bit too much, you should check out this book. It has changed my approach to worrying a lot.
Aaaaaaaand this app is amazing if you get easily disctucted or you have a tendency to work on one task for far too long.
You will need for waffles:
- 1,5 cups of white wheat flour
- ½ tbsp olive oil
- 1 cup coconut milk
- 1 tbsp agave syrup
- 2 eggs
- 2 tbsp cacao
- 1 tbsp baking powder
- pinch of salt
- 2 tbsp cacao
Place all the ingredients for waffles in a bowl and mix it well. This time I forgot to add chocolate chips, but I will next time. If I were you I’d add 2 tbsp chocolate chips to a dough. Make waffles as your waffle maker suggests.
You will need for raspberry sauce:
- 1 cup raspberries
- ½ apples
- 1 tsp agave syrup
- juice from ½ lemon
- zest from ½ lemon
- bit of juice from wild blueberries in sugar, optional
In a small bowl place ingredients for a sauce and using a hand blender or a regular blender, blend it well.
For serving:
- wild blueberries in sugar
- vanilla ice creams
I served my waffles with wild blueberries preserved in sugar, which I got from a friend. If you have a chance to collect or buy wild blueberries, then you should definitely preserve them in a sugar, it’s crazy amazing how delicious it is. Additionally, I added vanilla ice creams to make it a totally guilty breakfast.
